This creamy Mashed Cauliflower recipe offers a delicious, low-carb alternative to traditional mashed potatoes. Featuring steamed cauliflower pureed with sour cream, garlic butter, and parmesan cheese, this dish is smooth, flavorful, and perfect as a side for any meal.

  • Total Time: 30 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 2 large heads of cauliflower, chopped into florets
  • 3/4 cup sour cream (plus more to taste)
  • 6 tablespoons butter
  • 8 cloves garlic, minced
  • 1/3 cup parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Steam the cauliflower: Place the cauliflower florets in a large steamer basket set inside a large pot with about 1 inch of water. Cover with a lid and bring the water to a boil. Steam the cauliflower for 10 to 15 minutes until fork-tender, then remove from heat. Drain any excess water and return the cauliflower to the pot. Cover and let it rest for 5 minutes to finish steaming and soften further.
  2. Puree the cauliflower: Transfer the cooked cauliflower florets and sour cream to a large high-speed blender. Pulse a few times to break down the cauliflower, then blend continuously until smooth, scraping down the sides as needed. You may need to work in two batches depending on blender size.
  3. Brown the garlic and butter: In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook, stirring frequently, until the garlic is golden brown and fragrant. Reduce heat if necessary to avoid burning the garlic or butter.
  4. Puree again: Add half of the melted garlic butter, parmesan cheese, and about one teaspoon each of salt and black pepper to the blender with the mashed cauliflower. Blend until fully combined and smooth. Taste and adjust seasoning with additional salt and pepper if desired.
  5. Serve: Transfer the mashed cauliflower to a large serving bowl. Drizzle with the remaining melted garlic butter for extra flavor. Serve warm as a delicious, creamy side dish.

Notes

  • Make sure cauliflower is well steamed to achieve the smoothest texture.
  • If you don’t have a high-speed blender, use a food processor or an immersion blender.
  • Adjust garlic amount to your preference; you can sauté it longer for a deeper flavor.
  • To keep the dish lower carb, use full-fat sour cream but avoid any starchy additions.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on stovetop or microwave.
