  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

For the Sheet Pan:

  • 2 lbs boneless skinless chicken thighs, cut into 1½ inch pieces (about 5-6 thighs)
  • 5 garlic cloves, minced
  • 3 Tbsp plain Greek yogurt
  • 2 Tbsp lemon juice
  • 1 Tbsp tomato paste
  • 1 Tbsp smoked paprika
  • ½ Tbsp olive oil
  • ½ Tbsp ground cumin
  • ½ Tbsp dried oregano
  • 1 tsp salt
  • ¼ tsp black pepper
  • 3 bell peppers, sliced thick (red and orange mix recommended)
  • 1 red onion, sliced thick
  • Olive oil, for roasting the veggies (about 1 Tbsp)
  • Salt, for roasting the veggies
  • Lemon slices, for serving
  • Steamed white rice, for serving

For the Lemon-Garlic Yogurt Sauce:

  • ½ cup plain Greek yogurt
  • 1 Tbsp lemon juice
  • 1 small garlic clove, minced
  • 1 Tbsp fresh dill, chopped
  • Salt, to taste

Instructions

  1. Marinate the chicken: In a large bowl, combine minced garlic, Greek yogurt, lemon juice, tomato paste, smoked paprika, olive oil, ground cumin, dried oregano, salt, and black pepper. Add the chicken pieces and mix thoroughly until well-coated. Cover and refrigerate for 1 to 4 hours, or up to overnight to deepen the flavor.
  2. Prepare for baking: Preheat your oven to 425°F (220°C). Toss the sliced bell peppers and red onions with about 1 tablespoon olive oil and a generous pinch of salt on a large rimmed sheet pan. Spread the vegetables evenly on the pan.
  3. Arrange chicken and bake: Place the marinated chicken pieces on top of and around the vegetables on the sheet pan. Bake in the preheated oven for 15 to 20 minutes until the chicken is cooked through and vegetables are tender. For a bit of char and extra flavor, optionally broil the sheet pan for the last 3 minutes of cooking.
  4. Make the lemon-garlic yogurt sauce: While the chicken and veggies bake, combine Greek yogurt, lemon juice, minced garlic, and chopped fresh dill in a small bowl. Season with salt to taste and refrigerate until ready to serve.
  5. Serve your dinner: Spoon the roasted chicken and vegetables over steamed white rice. Top with a generous scoop of the lemon-garlic yogurt sauce. Garnish with fresh lemon slices and serve warm for a complete Mediterranean-inspired meal.

Notes

  • Marinating the chicken overnight intensifies the flavors but even a short 1-hour marinate will yield tasty results.
  • Using chicken thighs keeps the meat tender and juicy compared to chicken breasts.
  • The broiling step is optional but adds a lovely char and smoky notes to the chicken and peppers.
  • This recipe is easily doubled or tripled for larger gatherings by using additional sheet pans.
  • Leftover sauce can be refrigerated and used as a dip or salad dressing within 2 days.
