This Mediterranean Chicken recipe offers a delightful Greek-inspired dish featuring tender chicken cutlets cooked to perfection with a vibrant medley of tomatoes, Kalamata olives, capers, fresh spinach, and crumbled feta cheese. Ready in just 30 minutes, it’s an easy, flavorful, and elegant meal perfect for weeknight dinners.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 2 large chicken breasts
  • Salt & pepper to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil

Vegetables & Toppings

  • 1 cup little tomatoes (grape, cherry, etc.), cut into halves
  • 1/3 cup Kalamata olives
  • 1 tablespoon capers, drained
  • 2 cups (packed) fresh baby spinach
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare Chicken Cutlets: Slice the chicken breasts in half lengthwise to create 4 smaller cutlets. Season both sides evenly with salt, pepper, dried oregano, and garlic powder.
  2. Cook Chicken: Heat olive oil in a skillet over medium-high heat. When hot, add the chicken cutlets and cook for 5-6 minutes per side until fully cooked through and internal temperature reaches 165°F (74°C). Transfer the cooked chicken to a plate and set aside.
  3. Cook Vegetables: Reduce heat to medium. Add garlic (if using), halved tomatoes, Kalamata olives, and capers to the skillet. Sauté for 3-4 minutes until tomatoes start to soften but do not let the mixture reduce excessively; add a splash of broth or water if needed to maintain moisture.
  4. Add Spinach and Feta: Stir in the fresh baby spinach and crumbled feta cheese until the spinach wilts slightly and cheese begins to melt.
  5. Combine and Warm Through: Return the cooked chicken to the skillet along with any accumulated juices. Let everything warm through for another 1-2 minutes. Adjust seasoning with additional salt and pepper as desired, then serve immediately for a fresh and flavorful meal.

Notes

  • Use chicken breasts of even thickness for uniform cooking, or pound them slightly if needed.
  • If you don’t have Kalamata olives, substitute with other briny olives to maintain the Mediterranean flavor.
  • To keep the sauce from drying out, add a splash of chicken broth or water while sautéing the tomatoes and olives.
  • Serve with warm pita bread or over couscous or rice for a more filling meal.
  • Leftovers can be refrigerated and enjoyed within 2 days; reheat gently to preserve texture and flavor.
