Ingredients
Marinated Chicken
- 1 lb chicken breasts or thighs (rotisserie chicken can be used as a shortcut)
- 1 lemon, squeezed
- ¼ cup olive oil
- 1 tsp garlic powder
- ½ tsp Italian seasoning blend (dried oregano, dried basil, dried thyme)
- ½ tsp salt
- ½ tsp smoked paprika
Mediterranean Wraps
- 4-6 large tortillas
- 1 cup hummus
- ¼ cup cucumber, sliced
- ¼ cup tomatoes, chopped
- 1 cup romaine lettuce, shredded
- ¼ cup feta cheese
- ¼ cup olives, chopped (kalamata or green olives)
- 1 bell pepper, sliced and sautéed
- ½ red onion, sliced and sautéed
- 1 tsp olive oil (for sautéing)
Instructions
- Marinate the Chicken: If using raw chicken, slice breasts in half. In a large bowl, combine chicken with lemon juice, olive oil, garlic powder, Italian seasoning, salt, and smoked paprika. Let it marinate for at least 20 minutes to develop flavor.
- Cook the Chicken: Heat 1 tsp olive oil in a heavy-bottomed skillet over medium-high heat. Add the marinated chicken and cook for about 8-10 minutes per side, flipping a few times for even cooking. Ensure the internal temperature reaches 165ºF. Once cooked, transfer chicken to a plate.
- Sauté Peppers and Onions: In the same skillet, add 1 tsp olive oil. Add sliced bell pepper and red onion and sauté for about 5 minutes until softened and sweating. Season lightly with salt.
- Prepare the Wraps: Optionally, toast tortillas on the stove for 45 seconds to warm them. Spread a layer of hummus on each tortilla. Add chopped cucumbers, tomatoes, shredded romaine, feta cheese, chopped olives, sautéed peppers, onions, and sliced chicken.
- Wrap and Serve: Fold the bottom of the tortilla up halfway, then fold in the sides. Secure the wrap with a toothpick to keep it closed. Serve with extra hummus and sriracha if desired. Enjoy your fresh Mediterranean Chicken Wraps!
Notes
- You can substitute rotisserie chicken for a quicker preparation.
- Marinating the chicken for at least 20 minutes enhances the flavor but can be skipped if in a hurry.
- Toasting the tortillas warms them and adds a slight crisp texture but is optional.
- Use your favorite type of olives such as kalamata or green olives.
- If preferred, swap tortillas for gluten-free wraps to accommodate dietary needs.
