Ingredients
Salad Base
- 2 quarts salted water
- 1 cup pearled farro
Dressing
- 1/4 cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice (about 1 lemon)
- 2 tablespoons chopped fresh dill, basil, or mint
- 1 tablespoon honey
- 1/2 teaspoon sea salt
Salad Mix-ins
- 1 can Bumble Bee Snackers Tuna Salad
- 6 small radishes or 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup roasted hazelnuts
- Freshly ground black pepper, to taste
Optional
- Crumbled feta or goat cheese, for serving
Instructions
- Cook the Farro: Bring 2 quarts of salted water to a boil and add 1 cup of pearled farro. Simmer uncovered for 20 to 30 minutes, or until the farro is tender. Drain the farro without rinsing and set aside to cool.
- Prepare the Dressing: In a large bowl, whisk together 1/4 cup extra-virgin olive oil, 3 tablespoons fresh lemon juice, 2 tablespoons chopped fresh herbs (dill, basil, or mint), 1 tablespoon honey, and 1/2 teaspoon sea salt until well combined.
- Toss Farro with Dressing: Add the cooked farro to the dressing and toss to coat evenly. Allow the mixture to cool to room temperature or refrigerate if preferred.
- Combine Salad Ingredients: Once the farro mixture is cooled, gently fold in 1 can of Bumble Bee Snackers Tuna Salad, sliced radishes or cucumber, and halved cherry tomatoes.
- Garnish and Serve: Sprinkle the salad with 1/2 cup roasted hazelnuts and freshly ground black pepper to taste. Serve with crumbled feta or goat cheese if desired for added creaminess and flavor.
Notes
- For a nut-free version, omit the roasted hazelnuts or replace with roasted seeds like pumpkin seeds.
- The salad can be made ahead and refrigerated for up to 2 days, allowing flavors to meld.
- Use fresh herbs you prefer or have on hand, such as parsley or cilantro, for a different flavor profile.
- To make it vegan, substitute the tuna and cheese with plant-based alternatives.
- Serving the farro salad chilled makes it particularly refreshing on warm days.
