Ingredients
Vegetables and Aromatics
- 1 red bell pepper, deseeded and diced
- 1 pint cherry tomatoes, sliced in half
- 8 ounces baby spinach (small tub)
- 4 garlic cloves, minced
- 2 green onions, thinly sliced (white and green parts separated)
Proteins and Dairy
- 1 pound ground beef
- 2 tablespoons crumbled feta (optional)
Pantry Items and Seasonings
- 1 tablespoon olive oil
- ½ teaspoon dried oregano
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook the tomatoes and bell pepper: Heat the olive oil in a large sauté pan over medium-high heat. Add the diced bell pepper and halved cherry tomatoes and sauté for 4 to 5 minutes, or until the tomatoes are blistered and starting to release their juices. Stir in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant.
- Add the spinach: Add the baby spinach and the white parts of the sliced green onion to the pan. Stir and cook for 2 to 3 minutes, until the spinach is fully wilted and reduced in volume. Once done, transfer these cooked vegetables to a plate and set aside.
- Cook the beef: In the same pan, add the ground beef along with the dried oregano, kosher salt, and freshly ground black pepper. Use a spatula to break up the meat and cook over medium-high heat until browned and cooked through, about 7 to 8 minutes. Drain off any excess grease once cooked.
- Garnish and serve: Return the cooked vegetables to the pan with the browned beef. Add the green parts of the sliced green onion and stir everything together until warmed through. Remove from heat and sprinkle with crumbled feta cheese if desired before serving.
Notes
- You can substitute ground turkey or chicken for a leaner protein option.
- To make it vegetarian, omit the ground beef and add chickpeas or cooked lentils.
- Serve over rice, quinoa, or cauliflower rice for a heartier meal.
- Adjust seasoning with additional oregano or a squeeze of lemon juice for extra brightness if desired.
- Use crumbled feta sparingly to keep it light or skip for a dairy-free version.
