Ingredients
Vegetables
- 2 large Eggplants
- 1/4 medium Vidalia onion or other sweet onion
- 2 cloves Garlic
- 1 tablespoon fresh Parsley, chopped
Liquids & Oils
- 1/2 cup Extra virgin Olive oil
- 2 tablespoons Freshly squeezed lemon juice
Seasonings
- Salt, to taste
- Black pepper, to taste
- Spanish smoked paprika (hot or sweet), optional
Instructions
- Preheat the Oven. Set your oven to 400°F (200°C) to prepare for roasting the eggplants, ensuring they cook evenly and develop a smoky flavor.
- Prepare the Eggplants. Use a fork to puncture the eggplants all over. This helps release steam during roasting. Place them on a baking sheet lined with cooking spray or lightly brushed with olive oil to prevent sticking.
- Roast the Eggplants. Roast the eggplants for about 60 minutes, turning them every 15 minutes. This rotation ensures even cooking and consistent smoky flavor throughout the flesh.
- Prepare the Garlic Mixture. While eggplants roast, combine garlic cloves, olive oil, lemon juice, a pinch of salt and pepper, and if preferred, a splash of vinegar in a food processor. Blend until smooth to develop a flavorful base for the dip.
- Cool and Peel Eggplants. Remove the eggplants from the oven and allow them to cool enough to handle safely. Once cool, peel off the skin carefully to reveal the soft roasted flesh.
- Drain the Eggplant Flesh. Place the peeled eggplant flesh in a colander for about 15 minutes to let excess liquid drain out, preventing a watery dip. Then transfer to a cutting board and roughly chop to improve texture.
- Combine Ingredients. Transfer the chopped eggplant to a mixing bowl. Shred the quarter of a Vidalia onion directly into the bowl for freshness and slight crunch.
- Add Fresh Parsley. Sprinkle freshly chopped parsley over the mixture to add color and a herby note.
- Mix in the Garlic-olive Oil Blend. Pour the prepared garlic, olive oil, and lemon mixture over the eggplant and onions. Gently mix everything together to fully incorporate flavors without losing texture.
- Season to Taste. Sample the dip and adjust salt, pepper, or lemon juice as desired to balance the flavors perfectly.
- Add Paprika (Optional). For a smoky kick, sprinkle sweet or hot Spanish smoked paprika on top and fold gently into the dip.
- Chill Before Serving. Refrigerate the dip for at least one hour to let the flavors meld and the dip chill, enhancing taste and texture.
- Serve. Present the melitzanosalata as a mezze or appetizer alongside olives, crusty bread, or pita for a delightful start to any meal.
Notes
- Roasting the eggplants whole preserves moisture and adds depth to the flavor compared to other cooking methods.
- Draining the eggplant flesh is key to avoid a watery dip.
- If a food processor is unavailable, finely mince garlic and whisk with olive oil and lemon juice until well combined.
- Adjust lemon juice and garlic according to personal taste for stronger or milder flavors.
- This dip pairs excellently with fresh vegetables, pita chips, or as a spread on sandwiches.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
