Ingredients
Base Layer
- 3 cups crushed tortilla chips (or Dorito Nacho Cheese chips, divided)
Protein & Beans
- 15 oz. black beans (drained and rinsed)
- 2 cups chopped cooked chicken (rotisserie chicken works well)
Seasoning & Sauce
- 1 teaspoon ground cumin
- 21 oz. cream of chicken soup (2 (10.5 oz) cans, DO NOT add any water or milk)
- 10 oz. can Rotel tomatoes (undrained)
Cheese & Garnish
- 2 cups shredded jack cheese
- 2 cups shredded medium cheddar cheese
- 1 tomato (diced)
- 1 bunch cilantro (rinsed and chopped)
- Jalapeños (optional, for serving)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 13×9 inch casserole dish with non-stick cooking spray to prevent sticking.
- Layer Tortilla Chips: Lightly crush the tortilla chips and spread about 1 cup evenly across the bottom of the prepared baking dish to create the base layer.
- Add Chicken and Beans: Layer the chopped cooked chicken and drained black beans evenly over the crushed tortilla chips to form the second layer.
- Prepare and Spread Soup Mixture: Stir the ground cumin into the cream of chicken soup without adding any water or milk. Spread this mixture evenly over the chicken and beans using a spatula, then distribute the undrained canned Rotel tomatoes on top of the soup layer.
- Add Cheese and Remaining Chips: Evenly sprinkle the shredded jack and cheddar cheeses over the tomato layer. Then, top off the casserole with the remaining 2 cups of crushed tortilla chips for added crunch.
- Bake the Casserole: Place the casserole in the preheated oven and bake for 25 to 30 minutes until the casserole is hot, bubbly, and the cheese is completely melted.
- Garnish: Remove from the oven and garnish with the chopped cilantro and diced tomatoes to add a fresh contrast.
- Serve: Serve the casserole immediately, offering fresh jalapeño slices on the side for an optional spicy kick.
Notes
- Using rotisserie chicken saves time and adds flavor, but any cooked chicken will work.
- You can substitute Dorito Nacho Cheese chips for a richer flavor or use plain tortilla chips for a more neutral base.
- Leaving the cream of chicken soup undiluted ensures a thicker, creamier casserole consistency.
- Adjust jalapeño quantity based on your preferred spice level or omit if avoiding heat.
- This casserole can be prepared ahead and baked just before serving for convenience.
