  • Total Time: 50 minutes
  • Yield: 14 servings

Ingredients

White Chicken Chili:

  • 3 tablespoons butter, regular or plant-based
  • 1 large Anaheim pepper, chopped with the stem & seeds removed
  • 1/2 cup red onion, diced
  • 1 tablespoon garlic, minced
  • 1/4 cup all-purpose flour (sub gluten-free flour if desired)
  • 4 cups (32 oz) chicken broth
  • 1 pound boneless, skinless chicken thighs
  • 15 oz can of cannellini beans, drained & rinsed
  • 2 (4 oz) cans diced green chiles
  • 1/3 cup Nutpods unsweetened/unflavored creamer or half-&-half
  • 1/4 cup fresh cilantro, chopped
  • Lime zest from 1 lime
  • Lime juice from 1 lime
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon kosher salt, more if desired
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano leaves
  • 1/8 teaspoon ground black pepper
  • 8 oz block of plain cream cheese, softened

Mexican Street Corn:

  • 4 cans of corn, drained
  • 1 cup mayonnaise
  • 4 oz feta cheese, crumbled (sub dairy-free alternative if needed)
  • 1/2 cup red onion, diced
  • 4 tablespoons fresh cilantro, chopped
  • 2 tablespoons garlic, minced
  • 2 tablespoons lime juice
  • 2 teaspoons chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Topping Options:

  • Fresh cilantro, chopped
  • Cotija cheese, crumbled (or additional feta cheese)
  • Red onion, diced
  • Sour cream
  • Tortilla strips
  • Avocado, diced

Instructions

  1. Sauté: Bring a large dutch oven (5.5 quarts) to medium-high heat and add 3 tablespoons of butter to melt. Add the chopped Anaheim pepper, diced red onion, and 1 tablespoon minced garlic. Sauté for 3-5 minutes until the vegetables are slightly softened and fragrant.
  2. Flour + Broth: Sprinkle in 1/4 cup all-purpose flour and stir well to coat the vegetables, forming a light paste. Slowly pour in the chicken broth, about 1/2 cup at a time, stirring continuously to incorporate and prevent lumps. Continue adding broth until all 4 cups are combined.
  3. Cook Chicken: Bring the pot to a gentle simmer. Add the boneless, skinless chicken thighs to the pot. Let them simmer for approximately 15 minutes or until the internal temperature reaches 165°F (74°C), indicating the chicken is fully cooked.
  4. Make Mexican Street Corn: While the chicken simmers, combine all the ingredients for the Mexican street corn (corn, mayonnaise, feta cheese, red onion, fresh cilantro, garlic, lime juice, chili powder, paprika, kosher salt, and black pepper) in a large bowl. Mix until fully combined and set aside.
  5. Combine: Remove the cooked chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the pot along with the drained cannellini beans, diced green chiles, 1/3 cup creamer or half-&-half, chopped cilantro, lime zest, lime juice, chili powder, kosher salt, cumin, oregano, and black pepper. Stir well to combine all ingredients.
  6. Cream Cheese: Cut the softened cream cheese into large cubes and add them to the chili pot. Stir and let the chili simmer until the cream cheese is fully melted and smooth, enhancing the chili’s creamy texture.
  7. Add Street Corn: Reserve about one-quarter of the Mexican street corn mixture for serving. Carefully fold the remaining street corn into the pot of chili, mixing gently to combine. Taste and adjust seasonings as needed.
  8. Serve: Ladle the chili into bowls and top with your favorite toppings such as fresh cilantro, cotija cheese, diced red onion, sour cream, tortilla strips, and avocado. Include some of the reserved street corn on the side to enjoy the full flavor experience.

Notes

  • Use gluten-free flour as a substitute to make this recipe gluten-free.
  • Nutpods unsweetened creamer can be replaced with half-&-half or a dairy-free alternative like coconut cream.
  • To make it spicier, increase the chili powder or add chopped jalapeños.
  • Use boneless, skinless chicken thighs for best flavor and tenderness; chicken breasts can be used but may be less juicy.
  • You can prepare the Mexican street corn mixture ahead of time and refrigerate until ready to add to chili.
  • Ensure the cream cheese is softened for easier melting and creamier chili texture.
  • Adjust salt and spices at the end to suit your taste preferences.
