Ingredients
Filling
- 1 lb. cooked shredded seasoned chicken breast (3-4 cups shredded chicken breast)
- 8 oz. shredded Colby Jack cheese
Taco Shells
- 20-24 street taco corn tortillas
- Olive oil or cooking spray (for brushing or spraying tortillas)
Toppings
- Sour cream (for serving)
- Salsa (for serving)
- Fresh chopped cilantro (for garnish)
Instructions
- Preheat Oven: Heat your oven to 425 degrees Fahrenheit to prepare for baking the tacos.
- Prepare Tortillas: Arrange the street taco corn tortillas evenly on a baking sheet to ensure they cook uniformly.
- Oil Tortillas: Brush or spray both sides of each tortilla lightly with olive oil; this helps achieve that crispy outside texture after baking.
- Add Filling: Place a heaping tablespoon of shredded seasoned chicken onto each tortilla, then top with a heaping tablespoon of shredded Colby Jack cheese. If needed, use a second baking sheet to accommodate all tortillas.
- Melt Cheese: Bake the loaded tortillas for 2 minutes, just until the cheese melts to become gooey and warm.
- Form Tacos: Remove the tortillas from the oven and carefully fold each one in half, gently pressing them to form a taco shape without breaking.
- Final Crisp: Return the folded tacos to the oven and bake for another 12-15 minutes until the corn tortillas turn crispy and golden on the outside.
- Serve: Plate the mini tacos and serve them with sour cream, salsa, and a sprinkle of fresh chopped cilantro for garnish. Enjoy your tasty mini tacos!
Notes
- You can use pre-cooked chicken breast or cook your own by boiling, baking, or grilling before shredding and seasoning.
- Adjust the seasoning on the chicken according to your preference with spices like cumin, chili powder, paprika, garlic powder, or taco seasoning.
- For a crispier shell, make sure to brush both sides of the tortillas with olive oil.
- If you don’t have Colby Jack cheese, Monterey Jack or mild cheddar works well as a substitute.
- This recipe is easily doubled or halved depending on serving needs.
