A delicious and easy-to-make Mozzarella Turkey Pesto Sandwich featuring layers of tender turkey, fresh mozzarella, roasted red peppers, and peppery arugula on toasted ciabatta bread, all brought together by a flavorful basil pesto spread with a hint of honey.

  • Total Time: 15 minutes
  • Yield: 6 servings

Ingredients

Pesto Sauce

  • 1/3 cup basil pesto
  • 1 teaspoon honey or agave nectar
  • Salt and pepper to taste

Sandwich

  • 1 (1 lb) loaf ciabatta or Italian bread, sliced in half width-wise
  • 12 oz leftover turkey slices
  • 8 oz fresh mozzarella cheese, thinly sliced
  • 1/2 cup jarred roasted red peppers, thinly sliced
  • 1 cup firmly-packed arugula

Instructions

  1. Prepare the Pesto Sauce: In a small bowl, whisk together the basil pesto, honey (or agave nectar), and season with salt and pepper to taste. Set the sauce aside for a moment to let the flavors combine.
  2. Toast the Bread: Preheat your oven to 400°F (200°C). Scoop out some of the soft bread from the top half of the ciabatta loaf and discard to make room for filling. Place both halves of the bread cut-side up on a baking sheet and toast in the oven for 8-10 minutes until the bread becomes a light golden brown and slightly crispy.
  3. Assemble the Sandwich: Remove the toasted bread from the oven and brush both cut sides generously with the prepared basil pesto sauce. On the bottom half, layer the turkey slices evenly, followed by the thin slices of fresh mozzarella, roasted red peppers, and top with the arugula. Place the top half of the loaf over the fillings and press gently to help everything adhere together.
  4. Serve: Cut the assembled loaf into six individual sandwiches. Serve immediately while the bread is warm and the cheese is slightly softened for the best taste experience. Enjoy your delicious Mozzarella Turkey Pesto Sandwich!

Notes

  • Using leftover turkey makes this sandwich a great way to repurpose cooked meat.
  • If you prefer a vegetarian option, swap turkey slices with grilled vegetables or a plant-based deli meat.
  • For added crunch, consider adding thinly sliced cucumbers or crispy lettuce.
  • Adjust the amount of pesto and honey according to your taste preference.
  • Store any leftover sandwich components separately and assemble fresh to maintain texture.
