Ingredients
Dry Ingredients
- 1 cup whole almonds, roughly chopped
- 1 ½ cups rolled oats, coarsely chopped in a food processor
- 1 cup unsweetened shredded coconut, plus 1 tablespoon more for topping
- ½ cup ground flaxseed
- ¼ cup hemp hearts
- ½ cup mini dark chocolate chips
Wet Ingredients
- 1 cup almond butter
- ½ cup liquid honey
Instructions
- Prepare the Pan: Line an 8” x 8” brownie pan with two long pieces of 8” wide parchment paper placed in opposite directions, extending over the edges to form handles. Use cooking spray if necessary to stabilize the parchment paper.
- Chop Almonds: Roughly chop the almonds using a chef’s knife or pound them with a mallet and place them into a large mixing bowl.
- Process Oats: Pulse the rolled oats in a food processor until they are coarsely chopped and add them to the mixing bowl with the almonds.
- Add Remaining Ingredients: Add 1 cup shredded coconut, ground flaxseed, hemp hearts, dark chocolate chips, almond butter, and honey into the mixing bowl. Use a sturdy spatula to mix everything thoroughly until the mixture is completely incorporated.
- Transfer and Press Mixture: Transfer the granola mixture to the prepared pan. Spread it evenly from edge to edge and pack it down firmly using the bottom of a glass while covering the top with an 8” x 8” piece of parchment paper to press evenly.
- Add Topping: Remove the parchment cover and sprinkle the remaining 1 tablespoon of shredded coconut on top. Replace the parchment paper and gently press down so that the coconut sticks to the surface.
- Chill: Leave the parchment cover on and refrigerate the bars for 2 to 3 hours or overnight to set firmly.
- Cut and Store: Lift the set bars from the pan using the parchment handles. Transfer to a cutting board and cut into 12 bars with a large chef’s knife. Store the bars in an airtight container in the refrigerator and serve cold.
Notes
- Ensure the mixture is packed tightly to prevent crumbling when cutting.
- Use a sturdy spatula for thorough mixing to evenly distribute the almond butter and honey.
- These bars are best stored in the refrigerator due to the almond butter and honey content.
- Feel free to substitute honey with maple syrup for a vegan option, but note the texture may vary slightly.
- Chop the oats coarsely, do not process into fine flour to maintain texture in the bars.
