Ingredients
Truffle Mixture
- 45 Biscoff cookies
- ¼ cup Biscoff cookie butter
- 8 ounces cream cheese, softened
Coating
- 10-12 ounces white chocolate, finely chopped
Optional Topping
- 2 Tablespoons Biscoff cookie butter
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside to prevent sticking during chilling and coating.
- Make Cookie Crumbs: Place the Biscoff cookies in a food processor and pulse until you have fine crumbs, ensuring an even texture for the truffle base.
- Combine Ingredients: Heat ¼ cup of Biscoff cookie butter in a microwave-safe bowl for 15-20 seconds and stir until smooth. Add this warmed cookie butter along with the softened cream cheese to the food processor with the cookie crumbs. Pulse until fully combined into a thick, uniform dough.
- Form Truffles: Scoop the dough and use your hands to roll it into 1-inch balls. Arrange the balls on the lined baking sheet and chill them in the fridge for at least 1 hour, or alternatively in the freezer for 20 minutes to firm up.
- Melt White Chocolate: Before removing the balls from the fridge, melt the white chocolate in the microwave in 30-second increments, stirring between each until completely smooth and melted to ensure easy dipping.
- Coat Truffles: Using a fork or dipping tool, dip each chilled truffle ball into the melted chocolate, fully coating it. Shake gently to remove excess chocolate, then place back on the parchment-lined sheet.
- Set Coating: Return the coated truffles to the fridge and chill for an additional hour or until the white chocolate has fully set and hardened.
- Optional Decoration: If desired, microwave 2 tablespoons of Biscoff cookie butter for 15 seconds, stir, and drizzle or pipe it decoratively over the truffles. Chill again to set before serving.
Notes
- Ensure cream cheese is softened to room temperature for smooth mixing.
- For quicker chilling, place the truffle balls in the freezer for 20 minutes instead of refrigeration for 1 hour.
- Use finely chopped white chocolate for faster, even melting.
- The optional cookie butter drizzle adds extra flavor and a pretty finishing touch.
- Store truffles in the refrigerator for up to 5 days or freeze for longer storage.
