Ingredients
Crust
- 1 1/4 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 1/3 cup unsalted butter, melted
Filling
- 1 cup whipping cream
- 16 oz brick-style cream cheese, room temperature
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 teaspoons freshly squeezed lemon juice
Topping
- 1 jar cherry pie filling
Instructions
- Prepare the Pan: Line an 8×8 or 9×9 inch square pan with aluminum foil, leaving an overhang on each side for easy removal. Lightly spray the foil with non-stick cooking spray to prevent sticking.
- Make the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until evenly mixed, then press firmly into the bottom of the prepared pan to form an even crust layer.
- Whip the Cream: In a large mixing bowl, beat the whipping cream until soft peaks form, indicating it is stiff enough to hold shape but still light and fluffy.
- Prepare the Cream Cheese Mixture: In a separate bowl, beat the cream cheese until smooth and soft. Gradually add the powdered sugar, vanilla extract, and lemon juice, beating until the mixture is completely smooth and creamy.
- Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture using a rubber spatula. Mix carefully until the filling has a uniform texture without any streaks, preserving the lightness of the whipped cream.
- Assemble and Chill: Spoon the cheesecake filling evenly over the graham cracker crust and smooth the top with a spatula. Cover the pan and refrigerate for at least 6 hours or overnight to allow the cheesecake bars to set fully.
- Slice and Serve: Remove the chilled cheesecake from the fridge. Using the foil overhang, lift the cheesecake out of the pan onto a cutting board. Slice into 12 bars using a sharp knife.
- Add Topping: Spoon cherry pie filling on top of each cheesecake bar before serving for a sweet, fruity finish.
Notes
- For best results, ensure cream cheese is at room temperature to avoid lumps.
- Chill time is crucial to allow the bars to set properly; do not skip.
- Use fresh lemon juice for the best flavor impact.
- If you prefer a different fruit topping, blueberry or strawberry pie filling also works well.
- Bars can be stored in the refrigerator for up to 3 days covered tightly.
