Ingredients
Main Ingredients
- 1 cup nut butter (almond, peanut, cashew, sunflower seed, etc.)
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1 1/2 cup granola
- 1/4 cup ground flaxseed or almond flour (optional, helps bind and adds nutrition)
- 1/4 cup add-ins of choice (mini chocolate chips, chopped dried fruit, or chopped nuts)
Toppings (optional)
- Sesame seeds
- Hemp seeds
- Sunflower seeds
- Ground nuts
- Dried coconut
Instructions
- Mix wet ingredients: In a medium-sized bowl, combine the nut butter, honey, and vanilla extract. Stir well to create a smooth, cohesive mixture.
- Add dry ingredients: Add granola, ground flaxseed or almond flour (if using), and your chosen add-ins to the wet mixture. Mix thoroughly until everything is evenly coated and a uniform dough forms.
- Chill the mixture: Refrigerate the mixture for about 15 minutes to firm it up, which makes shaping easier. (Optional: You can also shape immediately if preferred, but the mixture will be stickier.)
- Shape into balls: Using a small cookie scoop or tablespoon, portion the mixture and roll it into bite-sized balls with your hands.
- Add toppings: Roll each shaped ball in your choice of toppings like sesame seeds, hemp seeds, sunflower seeds, ground nuts, or dried coconut to add texture and flavor.
- Store properly: Place the energy bites in an airtight container and keep them refrigerated. They will stay fresh and ready to eat for several days.
Notes
- Use any nut butter you prefer—almond, peanut, cashew, or sunflower seed work well.
- Granola can be store-bought or homemade; choose one with your favorite flavors and textures.
- The ground flaxseed or almond flour is optional but helps bind the bites and boosts nutrition.
- Add-ins like mini chocolate chips or dried fruit add flavor and variety.
- Refrigerating before shaping helps reduce stickiness, but you can shape immediately if you like.
- Store bites in the refrigerator to keep them firm and fresh for up to a week.
