Delicious no bake superfood brownies packed with healthy fats, fiber, and protein from a variety of nuts, dried fruit, and chia seeds. These vegan, gluten free, and naturally sweetened brownies offer a fudgy texture and rich flavor, making them the perfect nutritious treat or snack. Ready in just 40 minutes, these bars are topped with melted dark chocolate and a crunchy nut and fruit garnish.

  • Total Time: 40 minutes
  • Yield: 8 bars

Ingredients

For the Bars:

  • 1 cup (173g) packed pitted Medjool dates
  • ¼ cup (28g) raw walnuts
  • ¼ cup (28g) raw pecans halves
  • ½ cup (28g) shelled pistachios, divided
  • ¼ cup (21g) unsweetened finely shredded coconut
  • 1 tablespoon chia seeds
  • 3 tablespoons unsweetened cacao powder (or cocoa powder)
  • 1 tablespoon melted virgin coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup (30g) dried cranberries (or dried cherries or goji berries)
  • 1 tablespoon warm water, if necessary

For the Topping:

  • 2 ounces dark chocolate bar (vegan, if desired)

To Garnish:

  • 1 tablespoon shelled chopped pistachios
  • 1 tablespoon dried cranberries, cherries or goji berries
  • 1 tablespoon chopped pecans
  • Maldon sea salt, for sprinkling on top

Instructions

  1. Process Nuts and Dates: Add the pitted Medjool dates, walnuts, pecans, and ¼ cup of pistachios to a food processor. Pulse until the mixture becomes chunky.
  2. Add Remaining Dry Ingredients: Add the shredded coconut, chia seeds, cacao powder, melted coconut oil, vanilla extract, and sea salt to the food processor. Process again until the mixture is chunky and starts to clump together. If the mixture appears dry, add 1-2 tablespoons of warm water gradually to achieve a sticky consistency.
  3. Add Final Ingredients: Incorporate the remaining ¼ cup of pistachios and dried cranberries. Pulse a few more times to break them down slightly while maintaining some chunkiness.
  4. Shape the Bars: Transfer the mixture into an 8×4 inch loaf pan lined with parchment paper. Press the mixture firmly and evenly toward the sides and bottom of the pan to form a compact layer.
  5. Melt Chocolate: In a small saucepan over low heat, melt the dark chocolate until smooth, stirring frequently. Alternatively, melt the chocolate in the microwave in 30-second increments, stirring between each session to avoid burning.
  6. Top the Bars: Pour the melted chocolate over the pressed mixture in the pan. Tilt and spread so the chocolate coats the bars evenly.
  7. Garnish: Sprinkle the top with chopped pistachios, dried cranberries, chopped pecans, and a pinch of Maldon sea salt for added flavor and texture.
  8. Chill to Set: Place the pan in the freezer for 20 to 45 minutes to allow the bars to harden and set properly.
  9. Serve: Once firm, sprinkle again lightly with Maldon sea salt, then cut into 8 equal squares and serve.
  10. Storage: Store the brownies covered in the freezer for up to 1 month to maintain freshness and texture.

Notes

  • The bars are vegan, gluten free, and naturally sweetened with dates, making them a healthy snack option.
  • If the mixture feels too dry during processing, adding warm water gradually helps it to bind together better.
  • For a smoother chocolate melt, ensure low heat and stir continuously to prevent burning.
  • Keeping the bars refrigerated or frozen helps maintain their fudgy texture and prolongs shelf life.
  • You can swap dried cranberries with dried cherries or goji berries based on preference.
