Delicious and easy Nutella Oatmeal Bars featuring a chewy oat base topped with a rich Nutella and white chocolate glaze. Perfect as a sweet treat or snack, these bars combine wholesome oats with sweet, creamy toppings for an irresistible dessert.

  • Total Time: 50 minutes including cooling and chilling
  • Yield: 40 bars

Ingredients

Bars

  • 1 cup brown sugar
  • 2/3 cup + 1 tbsp + 2 tsp butter, softened to room temperature (about 175 grams)
  • ½ cup light corn syrup
  • 1 cup rolled oats
  • 3 cups instant oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt

Topping

  • 2 cups white chocolate chips
  • ¾ cup Nutella Hazelnut Spread

Instructions

  1. Preheat Oven: Set the oven to 375°F (190°C) to prepare for baking the oatmeal bars.
  2. Prepare Pan: Grease a 9×13 inch metal baking pan thoroughly to prevent sticking.
  3. Mix Bar Ingredients: In a large bowl, combine brown sugar, softened butter, light corn syrup, rolled oats, instant oats, vanilla extract, and salt. Mix until all ingredients are well combined and form a consistent mixture.
  4. Press Mixture into Pan: Evenly press the oatmeal mixture into the prepared pan, creating a compact layer.
  5. Bake Bars: Place the pan in the preheated oven and bake for 10-12 minutes or until the bars turn golden brown and firm.
  6. Prepare Topping while Baking: In a medium glass bowl, melt white chocolate chips and Nutella together in the microwave in intervals. Heat for 1 minute, stir quickly, then heat for an additional 30 seconds and stir again. Repeat short heating intervals as necessary until the mixture is smooth and fully melted.
  7. Spread Topping: Immediately after removing the bars from the oven, spread the melted Nutella and white chocolate topping evenly over the warm bars.
  8. Chill and Set: Place the pan in the refrigerator to chill until the topping firms up and bars are fully cooled.
  9. Cut and Serve: Once cooled, cut into squares (approximately 40 servings) and serve.

Notes

  • Softening butter to room temperature ensures better mixing and texture of the bars.
  • Use a metal baking pan for even heat distribution to prevent undercooked centers.
  • Microwave melting should be done gradually to avoid scorching the chocolate.
  • Chill bars thoroughly to achieve clean cuts and firm topping.
  • These bars can be stored in the refrigerator for up to a week in an airtight container.
