This Omega-3 Carrot Cake Smoothie is a nutritious, creamy, and delicious blend packed with vitamins, fiber, and healthy fats. Featuring frozen fruits, carrots, nuts, flaxseed, and warming spices, it’s a perfect quick breakfast or snack option that tastes like carrot cake in a glass.

  • Total Time: 5 minutes
  • Yield: 1 serving

Ingredients

Fruits and Vegetables

  • 1/2 cup frozen sliced banana (~70 grams)
  • 1/2 cup frozen pineapple (~80 grams)
  • 1 cup frozen sliced carrots (~125 grams)

Dried Fruits, Nuts & Seeds

  • 2 Tbsp. golden raisins (~20 grams)
  • 1 Tbsp. raw walnuts (~8 grams)
  • 1 Tbsp. ground flaxseed (~6 grams)
  • 1 Tbsp. rolled oats (~6 grams)

Spices

  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/64 tsp. allspice (small pinch)

Liquids

  • 1 cup unsweetened vanilla plant milk (~240 mL)

Instructions

  1. Add Frozen Fruit and Carrots: Place the frozen banana and/or frozen pineapple into the bowl of a high speed blender. Then add the frozen sliced carrots on top.
  2. Add Remaining Ingredients: Add the golden raisins, raw walnuts, ground flaxseed, rolled oats, and spices (cinnamon, nutmeg, and allspice) into the blender bowl. Just before blending, pour in the unsweetened vanilla plant milk.
  3. Blend Until Smooth: Blend the mixture on high speed for 40 to 60 seconds until smooth and creamy. Use the blender tamper as needed to help move the frozen ingredients and ensure even blending.

Notes

  • Use a high speed blender for best results with frozen ingredients.
  • The blender tamper helps mix thick frozen fruit and vegetables evenly.
  • Adjust the amount of plant milk for desired smoothie thickness.
  • For added protein, consider adding a scoop of plant-based protein powder.
  • This smoothie is best consumed immediately for optimal freshness.
