A hearty and delicious One-Pan Sloppy Joe Casserole that combines savory ground turkey, bell peppers, and a flavorful tomato-based sauce, all topped with melty cheese and fluffy refrigerated biscuits baked to golden perfection.

  • Total Time: 49 minutes
  • Yield: 3 servings

Ingredients

Sauce

  • 1 – 1⅓ cup tomato sauce (no salt added)
  • ⅓ cup ketchup
  • 1-2 Tbsp brown sugar
  • 2 Tbsp apple cider vinegar
  • 1 ½ tbsp Worcestershire sauce
  • ½ tsp onion powder
  • ½ tsp pepper
  • ½ tsp salt (adjust to taste)

Main Ingredients

  • 2-3 garlic cloves (minced)
  • ½ yellow onion (diced)
  • 1 Tbsp tomato paste
  • 2 bell peppers (1 red and 1 green, diced)
  • 1 lb ground turkey or beef
  • 1 – 1½ cup shredded cheese (about 4 oz, optional)
  • 4-5 halved refrigerated biscuits (such as Grands Buttermilk)
  • 1 Tbsp olive oil or preferred cooking oil

Instructions

  1. Prepare Sauce: Preheat the oven to 375°F. In a small bowl, whisk together tomato sauce, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, onion powder, pepper, and salt. Use 1 cup of tomato sauce for a thicker sauce or up to 1⅓ cup for a thinner consistency.
  2. Sauté Aromatics and Vegetables: Heat an oven-safe skillet over medium-high heat and add a tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Then add diced onions and tomato paste, cooking for 1-2 minutes to allow the paste to brown slightly. Add diced bell peppers and cook for another 3-5 minutes until softened.
  3. Cook Ground Meat: Push the sautéed vegetables to one side of the pan, add the ground turkey or beef to the other side, and let it sear for 2-3 minutes. Break the meat into smaller pieces and cook until fully browned and reaches an internal temperature of 165°F for turkey or appropriate for beef.
  4. Combine Sauce and Simmer: Reduce heat to medium-low and pour the prepared sauce into the skillet. Stir everything together and let the mixture simmer for 5-6 minutes until it thickens slightly.
  5. Add Cheese and Biscuits: Sprinkle shredded cheese evenly over the meat and vegetable mixture. Peel each refrigerated biscuit in half to make thinner portions and arrange them on top of the sloppy joe mixture, covering the surface.
  6. Bake: Place the skillet in the preheated oven and bake for 15-20 minutes, or until the biscuits are golden brown and cooked through. Optionally, brush the biscuit tops with melted butter after baking and sprinkle with chopped parsley before serving.

Notes

  • You can substitute ground turkey with ground beef if preferred.
  • Adjust brown sugar amount to control the sweetness of the sauce.
  • Using refrigerated biscuits speeds up the preparation time.
  • Ensure the skillet is oven-safe before baking.
  • Optional cheese can be omitted for a dairy-free version or substituted with a plant-based cheese.
