This Orange Lemon Posset recipe is a refreshingly creamy and citrusy dessert that is delightfully simple to prepare. With a rich base of heavy cream combined with fresh orange and lemon juices, this posset is elegantly served in hollowed-out orange halves, creating a beautiful presentation perfect for any occasion. The dessert requires minimal ingredients and a short cook time, but needs several hours to set in the refrigerator, resulting in a smooth, velvety texture and a burst of bright citrus flavor.

  • Total Time: 4 hours 25 minutes
  • Yield: 6 servings

Ingredients

Citrus

  • 3 Naval oranges
  • 1/4 cup juice from the Naval oranges
  • 2 tablespoons lemon juice

Main Ingredients

  • 16 ounces heavy cream or heavy whipping cream (2 cups/1 pint)
  • 1 cup granulated sugar

Instructions

  1. Juicing the Oranges: Cut the oranges in half horizontally, not from stem to end. Juice the oranges until you obtain 1/4 cup of orange juice. Reserve any extra juice or orange halves for other uses.
  2. Preparing Orange Rinds: Using a paring knife, carefully cut around the white pith of each orange half. Then use a spoon or a grapefruit spoon to gently scoop out the orange segments, being cautious not to puncture holes in the rinds.
  3. Mixing Citrus Juices: Combine the 1/4 cup orange juice with 2 tablespoons of fresh lemon juice in a small bowl and set aside.
  4. Cooking Cream and Sugar: In a small saucepan, combine the heavy cream and granulated sugar. Heat over medium heat, stirring almost constantly, until the mixture reaches a boil. Reduce heat to a simmer and cook gently for 3 minutes, stirring frequently and scraping down the sides of the pan to prevent film formation. The mixture should thicken slightly and coat the back of a spoon. If needed, add an additional minute of simmering. Remove from heat and allow to rest for 1 to 2 minutes.
  5. Combining with Citrus Juices: After resting, stir the mixed citrus juice into the cream mixture. Strain the combined mixture through a mesh strainer into a liquid measuring cup to ensure smoothness.
  6. Filling the Orange Halves: Arrange the hollowed-out orange halves in a muffin pan, making sure they sit upright and stable. Pour the posset mixture into each orange half nearly to the top. You should have enough leftover to fill a small ramekin.
  7. Chilling and Setting: Place the filled orange halves and ramekin in the refrigerator uncovered for at least 4 hours to set. For best results, refrigerate for 6 hours or overnight, especially if the refrigerator door is frequently opened. Do not cover before the posset sets to prevent condensation dripping onto the dessert.
  8. Serving: Once set, garnish the possets with fresh mint sprigs and/or fresh raspberries if desired. Serve chilled and enjoy this creamy, citrus-infused treat.

Notes

  • Ensure orange rinds are intact to hold the posset mixture securely.
  • If preferred, garnish with fresh mint or berries for a colorful presentation.
  • Refrigerate uncovered to avoid condensation; cover only after the posset has fully set.
  • Extra juice and scooped orange flesh can be used in smoothies or other desserts.
  • Simmer mixture carefully to prevent boiling over or burning at the bottom.
