These Oven Baked Beef Taquitos are a crispy, flavorful dish featuring seasoned ground beef, refried beans, and melted Mexican cheese wrapped in corn tortillas and baked to perfection. A healthier alternative to traditional fried taquitos, they’re perfect for a crowd and can be served with your favorite toppings for a delicious Mexican-inspired meal.

  • Total Time: 40 minutes
  • Yield: 12 taquitos (serves 12)

Ingredients

Taquito Filling

  • 1 teaspoon avocado oil (plus additional for greasing the taquitos)
  • 1 lb. grass-fed ground beef
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 cup refried beans (store-bought or homemade)
  • 1 cup shredded Mexican cheese

Taquitos Assembly

  • 12 corn tortillas

Instructions

  1. Preheat and Prepare: Preheat the oven to 400ºF (204ºC) and line a rimmed baking sheet with parchment paper. Lightly grease the parchment paper with avocado oil to prevent sticking.
  2. Cook the Beef: Heat avocado oil in a skillet over medium heat. Add the ground beef and cook until no longer pink, about 4-6 minutes, breaking it apart as it cooks. Drain any excess fat from the skillet.
  3. Season the Beef: Add paprika, chili powder, garlic powder, onion powder, sea salt, and black pepper to the beef. Cook for an additional minute while stirring to coat evenly. Then remove from heat and let cool slightly.
  4. Combine Filling: Transfer the beef mixture to a bowl. Add the refried beans and shredded Mexican cheese, mixing well until the ingredients are fully combined.
  5. Warm Tortillas: Warm the corn tortillas either in a hot cast-iron skillet or in the microwave just until pliable and easy to roll, roughly 20-30 seconds in the microwave or a few seconds per side in a skillet.
  6. Assemble Taquitos: Place one tortilla on a flat surface and spoon about 1/4 cup of the beef mixture onto one side. Roll the tortilla tightly around the filling and place it seam-side down on the prepared baking sheet. Repeat with remaining tortillas and filling.
  7. Oil and Bake: Lightly brush or spray the tops of the taquitos with avocado oil. Bake them on the lowest oven rack for 15-20 minutes, flipping halfway through baking. Bake until the tortillas are lightly crisp and the filling is melted and hot.
  8. Serve: Serve the taquitos hot with optional garnishes such as chopped lettuce, diced tomatoes, queso fresco, fresh cilantro, and hot sauce for added flavor.

Notes

  • Use fresh or homemade refried beans for enhanced flavor.
  • Warming tortillas makes them pliable and easier to roll without cracking.
  • Optionally, brush taquitos with oil on both sides for extra crispiness.
  • Serve with sour cream, guacamole, or salsa for extra dipping options.
  • For a spicier version, add cayenne pepper or chopped jalapeños to the filling.
