Ingredients
Vegetables and Aromatics
- 1 yellow onion, finely diced
- 1 green bell pepper, finely diced
- 1 red bell pepper, finely diced
- 2 cloves garlic, minced
Tomato and Spices
- 1 (28 oz) can whole peeled tomatoes
- 3/4 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- 2 teaspoons za’atar
Eggs and Garnish
- 6 eggs
- 2 oz feta, crumbled
- 2 tablespoons chopped cilantro
- Additional salt & pepper to taste
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the shakshuka.
- Combine Vegetables and Spices: In a 9×13-inch glass baking dish, add the finely diced onions, green and red bell peppers, canned whole peeled tomatoes, minced garlic, salt, paprika, ground coriander, ground cumin, chili powder, and za’atar. Use a fork to gently mash the tomatoes, breaking them down slightly, then stir everything together to evenly combine the flavors.
- Bake the Sauce: Place the baking dish uncovered in the oven and bake for 30 minutes. This allows the onions and bell peppers to soften and the sauce to thicken while the spices meld.
- Add the Eggs: Remove the dish from the oven and carefully create small wells in the sauce. Crack one egg into each well, ensuring the yolks remain intact.
- Bake the Eggs: Return the dish to the oven and bake for an additional 15 minutes, or until the egg whites are fully set and the yolks are beginning to set. Adjust baking time if you prefer your yolks runnier or firmer, remembering that eggs will continue to cook slightly once removed from the oven.
- Garnish and Serve: Once done, sprinkle the shakshuka with chopped cilantro and crumbled feta cheese. Season with additional salt and pepper to taste. Serve warm with toasted bread, pita, or couscous to soak up the delicious sauce.
Notes
- Adjust the chili powder quantity based on your preferred spice level.
- You can substitute za’atar with a mix of thyme, sesame seeds, and sumac if unavailable.
- For a vegan version, omit eggs and feta; add cooked chickpeas or tofu instead.
- Use a sturdy oven-safe dish for even cooking.
- Serve with crusty bread or flatbread to enjoy the sauce fully.
