Ingredients
Potatoes
- 2 pounds baby red potatoes
- 3-4 cloves garlic (smashed and left whole)
Seasoning
- 3 1/2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon seasoning salt
- Cracked black pepper (to taste)
- 1/4 teaspoon thyme
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
Garnish
- Fresh dill (or rosemary, thyme, or parsley, to garnish)
- 1 tablespoon white wine vinegar (to garnish)
Instructions
- Preheat Oven: Preheat your oven to 400 degrees F to get it ready for roasting the potatoes.
- Prepare Potatoes: Wash and scrub the baby red potatoes thoroughly, then spread them out to dry completely to ensure a crisp roast.
- Slice Potatoes: Slice each potato in half or into quarters for larger potatoes, ensuring all pieces are roughly the same size for even cooking.
- Arrange on Baking Sheet: Place the cut potatoes on a rimmed 11×17 inch baking sheet.
- Add Garlic: Add 3-4 cloves of smashed whole garlic to the pan; you may also mince and mix the garlic into the potatoes if preferred.
- Drizzle Oil: Drizzle 3 1/2 tablespoons of olive oil evenly over the potatoes and garlic.
- Mix Spices: In a small bowl, combine 1 teaspoon kosher salt, 1/2 teaspoon seasoning salt, cracked black pepper to taste, 1/4 teaspoon thyme, 1/8 teaspoon cayenne pepper, and 1/2 teaspoon garlic powder.
- Season Potatoes: Sprinkle the spice mixture over the potatoes and massage the oil and spices into the potatoes by hand to ensure all pieces are well-coated.
- Arrange Cut-Side Down: Place the potatoes on the pan cut-side down, ensuring they do not touch to avoid steaming and to achieve crispiness.
- Roast First Side: Roast the potatoes in the preheated oven for about 30 minutes.
- Flip Potatoes: Remove the pan and carefully flip the potatoes so the other side touches the pan. Remove any excess pooled oil with a paper towel to promote browning.
- Finish Roasting: Return the pan to the oven and roast for an additional 15-20 minutes, bringing the total roasting time to 45-50 minutes.
- Garnish and Serve: Remove the potatoes from the oven and garnish with freshly chopped herbs such as dill or parsley. Just before serving, toss with 1 tablespoon of white wine vinegar for a flavorful zing. Optional: add shredded parmesan on top.
- Store Leftovers: Cover and refrigerate leftovers. To reheat, warm them in the oven at 350°F for about 10 minutes or sauté briefly in a pan to maintain crispness. Microwaving is possible but will soften the texture.
- Serving Suggestions: Serve these crispy roasted potatoes as a side dish or appetizer with dips like chipotle mayo, garlic aioli, tzatziki, creamy buttermilk ranch, or cheese sauce.
Notes
- Ensure potatoes are dry before roasting to maximize crispiness.
- Arrange potatoes so they do not touch; this prevents steaming and promotes even roasting.
- Whole smashed garlic cloves impart a milder flavor; mince for stronger garlic taste.
- The cayenne pepper adds flavor complexity without significant heat.
- Add fresh herbs and vinegar just before serving to maintain their brightness.
- Reheating in the oven or pan maintains texture better than microwaving.
- These potatoes can be served hot or at room temperature and pair well with a variety of dips.
