This easy Oven Roasted Vegetables recipe features a vibrant mix of fresh carrots, bell peppers, zucchini, sweet potato, red onion, and broccoli, perfectly seasoned and roasted until tender with crisp, caramelized edges. It’s an ideal healthy side dish to complement chicken, beef, pork, pasta, or fish meals.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Vegetables

  • 2 Carrots, peeled and chopped
  • 1 Red Bell Pepper, cut into 1-inch pieces
  • 1 Yellow or Orange Bell Pepper, cut into 1-inch pieces
  • 2 Zucchini, trimmed and cut into 1/2-inch pieces
  • 1 Small Sweet Potato, cleaned and cut into 3/4-inch pieces
  • 1 small Red Onion, cut into 1-inch pieces
  • 1 Head Broccoli, chopped (about 2 cups of florets)

Seasoning & Oil

  • 4 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Kinder’s Buttery Steakhouse Seasoning (or substitute with 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper)

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to prepare it for roasting the vegetables evenly and thoroughly.
  2. Prepare the vegetables: Arrange the chopped carrots, red and yellow/orange bell peppers, zucchini, sweet potato, red onion, and broccoli evenly across two baking sheets (use one pan if roasting a smaller quantity).
  3. Season and oil: Drizzle the vegetables with 4 tablespoons of extra virgin olive oil and sprinkle 1 tablespoon of Kinder’s Buttery Steakhouse Seasoning over them. Toss the vegetables well to ensure all pieces are coated evenly with oil and seasoning.
  4. Roast the vegetables: Place the baking sheets in the oven and roast for 25 to 35 minutes. Halfway through cooking, stir the vegetables and rotate the pans to promote even caramelization and browning.
  5. Serve and enjoy: Once roasted to tender perfection with crisp edges, remove the vegetables from the oven and serve hot as a flavorful side dish to your main course.

Notes

  • If you don’t have Kinder’s Buttery Steakhouse Seasoning, you can substitute with a mixture of garlic powder, onion powder, smoked paprika, salt, and black pepper for a similar savory taste.
  • Feel free to customize the vegetables based on seasonal availability or preference.
  • Use parchment paper on the baking sheets for easier cleanup.
  • Make sure to cut vegetables into uniform sizes to ensure even cooking.
