3.9 from 4 reviews

This Overnight Chia Oats recipe is a quick and nutritious no-cook breakfast option that combines chia seeds and rolled oats soaked overnight in oat milk and flavored with vanilla, maple syrup, sea salt, and cinnamon. It’s perfect for busy mornings, providing a creamy, satisfying texture that can be enjoyed plain or topped with fresh fruit for added flavor and nutrients.

  • Total Time: 12 hours 5 minutes
  • Yield: 2 servings

Ingredients

Base Ingredients

  • 3 tablespoons chia seeds
  • 3/4 cup rolled oats
  • 1 1/4 – 1 1/2 cups oat milk or milk of choice

Flavorings

  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • a big pinch of flaky sea salt
  • cinnamon, to taste

Instructions

  1. Combine Ingredients: In a bowl, mix together the chia seeds, rolled oats, oat milk (use 1 1/4 cups for thicker oats or up to 1 1/2 cups for a milkier consistency), vanilla extract, maple syrup, sea salt, and cinnamon. Stir well to make sure everything is evenly distributed.
  2. Refrigerate Overnight: Transfer the mixture into a storage jar or container with a lid. Place it in the refrigerator and let it soak for a minimum of 4 hours, though ideally 12 hours or more to allow the oats and chia seeds to absorb the liquid and soften.
  3. Serve: Remove the jar from the fridge. Stir the mixture if needed, then divide it into two bowls. Optionally, top with fresh fruit or nuts before serving for extra flavor and nutrition.

Notes

  • Use rolled oats, not instant or steel-cut oats, for best texture.
  • You can substitute oat milk with any milk of your choice, such as almond milk, cow’s milk, or soy milk.
  • Maple syrup can be replaced with honey, agave nectar, or other sweeteners if preferred.
  • Store leftovers in an airtight jar in the refrigerator for up to 4-5 days.
  • Adjust cinnamon amount to taste or omit if you want a more neutral flavor.
