This Paleo & Vegan Chai Latte Chia Pudding is a creamy, spiced delight perfect for a healthy breakfast or snack. Infused with warming chai spices and black tea, it blends almond milk with chia seeds to create a nutrient-rich pudding that firms up after chilling. Sweetened naturally with maple syrup (or a sugar-free option for keto), it’s a satisfying and comforting treat that caters to paleo, vegan, and keto diets.

  • Total Time: 3 hours 15 minutes (including chilling time)
  • Yield: 4 servings

Ingredients

Chai Latte Base

  • 2 cups almond milk (or any dairy-free milk)
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 3 tbsp maple syrup (or sugar free sweetener for keto)
  • 1 black tea bag

Chia Pudding

  • 6 tbsp chia seeds

Instructions

  1. Heat spices with almond milk: In a small saucepan, combine the almond milk with cinnamon, ginger, cardamom, nutmeg, and cloves. Heat the mixture over medium-high heat, whisking occasionally to prevent lumps and to distribute the spices evenly.
  2. Boil and sweeten: Once the mixture starts boiling, immediately turn off the heat and stir in the maple syrup or your choice of sugar-free sweetener to dissolve it evenly.
  3. Steep the tea: Add the black tea bag to the hot spiced milk and let it steep for 15 minutes as the mixture cools, allowing the tea flavors to infuse deeply.
  4. Remove tea bag and add chia seeds: Take out the tea bag, discarding it, then stir in the chia seeds thoroughly to distribute them throughout the liquid.
  5. Rest and stir chia pudding: Let the mixture rest for 5 minutes, then give it another stir to break up any clumps and ensure even chia seed distribution.
  6. Chill to set: Pour the pudding into a glass container and refrigerate for at least 3 hours or overnight to let it firm up into a pudding consistency.
  7. Serve and garnish: Enjoy the pudding on its own or topped with your favorite fruits, nuts, coconut chips, or nut butter for added texture and flavor.

Notes

  • Use any dairy-free milk such as oat, coconut, or cashew milk if almond milk is not available.
  • For a keto-friendly version, replace maple syrup with a sugar-free sweetener like erythritol or stevia.
  • Steeping the tea longer enhances flavor but avoid steeping beyond 20 minutes to prevent bitterness.
  • Stirring the chia pudding after resting helps prevent clumping for a smoother texture.
  • Chilling time can be overnight for best pudding firmness.
  • Add toppings just before serving to maintain crunchiness and freshness.
