Ingredients
Primary Ingredients
- 1 medium unripe green papaya
- ½ tablespoon dried shrimp
- 2 Thai chili peppers
- 2 cloves garlic (peeled)
- 1 teaspoon shrimp paste
- ¼ cup halved cherry tomatoes
Seasonings & Sauces
- 1 tablespoon Som Tam powder
- 1 tablespoon papaya salad sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 tablespoon fresh lime juice
Instructions
- Shred the papaya: Peel the skin off the green papaya using a sharp vegetable peeler and discard the skin. Then peel long strips of papaya into a large bowl until you have about 3 cups of shredded papaya. Save any remaining papaya for later use and set shredded papaya aside.
- Smash flavor base: In a papaya pot or large deep bowl, combine dried shrimp, Thai chili peppers, garlic cloves, and shrimp paste. Using a large wooden pestle or the back of a thick wooden spoon, smash these ingredients together for 2 minutes until they become soft and fragrant, which helps to release and blend their flavors.
- Add remaining ingredients: To the smashed mixture, add halved cherry tomatoes, Som Tam powder, papaya salad sauce, fish sauce, sugar, lime juice, and shredded papaya. Gently smash and mix everything together using the pestle, ensuring the shredded papaya is thoroughly coated with the dressing and flavors but be cautious to avoid chili contact with your eyes.
- Taste and adjust: Sample the salad and adjust seasoning by adding more lime juice, sugar, fish sauce, or chilies as preferred to achieve a perfect balance of sour, sweet, salty, and spicy flavors.
- Serve: Transfer the papaya salad to serving plates and enjoy immediately for the freshest taste.
Notes
- Unripe green papaya is essential for the authentic crunchy texture and slightly tart flavor.
- If you prefer less heat, reduce or omit the Thai chili peppers according to your spice tolerance.
- Use a large sturdy bowl or traditional mortar and pestle for the best mixing and flavor infusion.
- Adjust sweetness and acidity according to your taste preferences for a balanced salad.
- Consume fresh as the salad is best enjoyed immediately and can become watery if stored for long.
