Ingredients
Fruit and Yogurt Base
- 1 Banana
- 1 cup plain yogurt
Fruit Layer
- 1 ½ cups strawberries, cut in half & tops removed
Topping
- ¼ cup granola (any kind, ‘classic’ flavor recommended)
Instructions
- Prepare Banana Yogurt Mixture: Add the banana and plain yogurt to a blender and blend until smooth. Divide the mixture in half; place one half into popsicle molds and refrigerate the other half for later. Freeze the filled molds for 1 hour to set the first layer.
- Blend Strawberry Layer: Blend the strawberries in a blender until smooth. Pour the strawberry puree over the frozen banana yogurt layer in the popsicle molds.
- Add Granola Topping: Sprinkle about 1-2 teaspoons of granola into each popsicle mold on top of the strawberry layer. It’s fine if some granola sinks into the strawberry mixture. Freeze for another hour.
- Finish Popsicles: Add the reserved banana yogurt mixture evenly over the strawberry and granola layers. Insert popsicle sticks and freeze the molds for at least one more hour, or until completely frozen solid. Enjoy your parfait breakfast popsicles!
Notes
- The amount of granola is flexible, so adjust according to your preference for crunchiness.
- Use plain yogurt for a balanced flavor but flavored or Greek yogurt can be substituted for varied taste and texture.
- Ensure each layer is sufficiently frozen before adding the next to maintain distinct layers.
- These popsicles can be stored in the freezer for up to one week.
- For added sweetness, drizzle honey or maple syrup before freezing layers.
