Ingredients
Ice Cream Sandwiches
- 5 large ice cream sandwiches, cut in half
- 10 popsicle sticks
Magic Shell Topping
- 8 oz. semi-sweet chocolate chips
- 1 cup refined coconut oil (liquid or solid; do not use unrefined or virgin)
- 6 tablespoons light corn syrup
- Red, white, and blue jimmie sprinkles (or any colors you prefer)
Instructions
- Prepare the Ice Cream Sandwiches: Cut each ice cream sandwich in half and insert a popsicle stick into each half while keeping the paper wrapping on. Arrange the sandwiches on a cookie sheet lined with parchment paper and place them in the freezer to chill while you prepare the magic shell.
- Make the Magic Shell Mixture: In a medium microwave-safe bowl, combine the semi-sweet chocolate chips, refined coconut oil, and light corn syrup. Microwave in 15-second intervals, stirring each time, until the chocolate just melts—approximately one minute. Be careful not to overheat to avoid browned chocolate.
- Prepare for Dipping: Transfer the melted chocolate mixture into a tall glass to allow easy dipping of the sandwiches.
- Dip the Ice Cream Sandwiches: Remove ice cream sandwich halves from the freezer and peel off the paper. Dip each sandwich into the chocolate mixture, lightly letting excess drip back into the glass. Immediately sprinkle with red, white, and blue jimmies over a small bowl to catch any extra sprinkles, then place the coated sandwiches back onto the parchment-lined cookie sheet.
- Freeze to Set: Once all sandwiches are coated, return them to the freezer for about one minute to set the magic shell. Enjoy immediately or keep frozen until ready to serve.
Notes
- Keep the paper wrapping on while inserting popsicle sticks to make handling easier.
- The magic shell topping recipe makes about two cups; leftover magic shell can be stored at room temperature covered and re-stirred if it separates.
- Use refined coconut oil to avoid coconut flavor in the magic shell.
- Make sure not to overheat the chocolate mixture to prevent it from scorching and developing brown specks.
- This treat is best served immediately after dipping or kept frozen until serving.
