Ingredients
Peanut Butter Egg Mixture
- 3/4 cup butter, melted
- 4 cups powdered sugar
- 1 1/2 cups creamy peanut butter
- 1 teaspoon vanilla extract
Chocolate Coating and Decorations
- 16 ounces Ghirardelli chocolate melting wafers
- 10 ounces Ghirardelli white chocolate melting wafers
- Assorted sprinkles
- Colored candy melts
- 2 jimmies (for bunny ears, optional)
- Half a mini marshmallow (for bunny tail, optional)
- Toothpick (for decorating eyes)
Instructions
- Prepare the Peanut Butter Mixture: In a mixer, combine the melted butter, powdered sugar, creamy peanut butter, and vanilla extract until smooth and fully blended. For easier handling during shaping, cover and refrigerate the mixture for about one hour until it firms up.
- Shape the Eggs: Once chilled, roll the mixture into two-inch logs. Pinch one end of each log to form an egg shape and then press your thumb on the top to flatten slightly. Place each shaped egg onto a baking sheet lined with wax paper. Repeat this process until all the dough is shaped. Freeze the shaped eggs for at least 30 minutes to help them set before dipping.
- Melt the Chocolates: Melt the Ghirardelli chocolate melting wafers and white chocolate melting wafers in separate dishes according to the package instructions, ensuring they are smooth and ready for dipping.
- Dip the Eggs: Using two forks, carefully dip each frozen peanut butter egg into your choice of melted chocolate or white chocolate. Allow excess chocolate to drip off by gently tapping the forks, then place the coated egg onto a parchment-lined surface. Repeat until all eggs are coated.
- Decorate with Candy Melts: Melt various colors of candy melts in small bowls. Transfer melted candy melts into separate small Ziploc bags and cut a tiny corner to create a piping bag. Use these to drizzle or decorate the chocolate-coated eggs creatively.
- Add Sprinkles and Bunny Decorations: To add sprinkles, re-dip an egg into the desired chocolate coating and immediately sprinkle with decorations before it sets. To create bunny faces, use a toothpick dipped in chocolate to dot on eyes, attach two jimmies for ears and a half mini marshmallow for the tail using white chocolate as glue. Allow these decorations to set.
- Set and Store: Allow all decorated eggs to fully set at room temperature for about 10 minutes. For best flavor and texture, store finished peanut butter chocolate eggs in the refrigerator until ready to serve.

- You can customize decorations with any colors or types of sprinkles and candy melts according to occasion or preference.
- Store finished eggs in an airtight container in the refrigerator to maintain freshness.
