These Peanut Sauce-Marinated Chicken Skewers are a flavorful and easy-to-make dish featuring tender chicken thighs marinated in a rich and tangy peanut sauce. Perfect for a family-style meal or entertaining guests, the chicken is baked to juicy perfection and garnished with fresh herbs and crushed peanuts for added texture and taste.

  • Total Time: 1 hour 15 minutes
  • Yield: 8 servings

Ingredients

Peanut Sauce Marinade

  • ½ cup creamy peanut butter
  • 6 garlic cloves, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon white vinegar
  • 4 green onions, minced (half for marinade, half for garnish)
  • ¼ cup minced fresh cilantro, plus more for serving
  • 2 teaspoons ground ginger
  • 1 teaspoon kosher salt

Chicken Skewers

  • 3 pounds boneless skinless chicken thighs, cut into 1 inch pieces
  • Vegetable oil, for brushing
  • 12 metal (6-inch) skewers
  • ½ cup peanuts, crushed, for serving
  • Crushed red pepper flakes, optional

Instructions

  1. Prepare the Peanut Sauce Marinade: In a large bowl, combine creamy peanut butter, minced garlic, soy sauce or tamari, toasted sesame oil, white vinegar, half of the minced green onions, fresh cilantro, ground ginger, and kosher salt. Whisk well until the sauce is smooth and all ingredients are fully incorporated.
  2. Marinate the Chicken: Add the bite-sized chicken thigh pieces to the peanut sauce marinade. Toss thoroughly to ensure each piece is evenly coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to infuse, or marinate overnight for a deeper taste.
  3. Preheat the Oven and Prepare Rack: Preheat your oven to 400°F (200°C) and position a rack in the center. Place a metal cooling rack inside a rimmed baking sheet and brush the rack lightly with vegetable oil to prevent sticking.
  4. Assemble the Skewers: Remove the chicken pieces from the marinade, allowing excess sauce to drip off. Thread the chicken tightly onto the metal skewers evenly, then place the skewers onto the prepared baking rack on the rimmed sheet pan.
  5. Bake the Chicken Skewers: Bake the skewers in the preheated oven for approximately 20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) when checked with an instant-read thermometer. This ensures the chicken is fully cooked and juicy.
  6. Garnish and Serve: Remove the skewers from the oven and transfer to a serving platter. Garnish generously with the remaining minced green onions, crushed peanuts, and optional crushed red pepper flakes for an extra kick. Serve family-style and enjoy!

Notes

  • If using wooden skewers instead of metal, soak them in water for 30 minutes prior to threading to prevent burning.
  • You can substitute chicken breasts for thighs, but cooking time may be shorter and meat less juicy.
  • For a gluten-free version, use tamari instead of soy sauce.
  • Leftover skewers can be refrigerated for up to 2 days and reheated gently in the oven.
  • Adjust crushed red pepper flakes according to heat preference or omit if serving children.
