3.9 from 2 reviews

This classic New York Strip Steak recipe delivers a perfectly seared, tender, and juicy steak with a rich buttery finish. The steak is first seasoned and seared on the stovetop to develop a flavorful crust, then finished in the oven to reach the ideal medium doneness. Resting the steak with butter enhances the flavor and juiciness for an indulgent dining experience.

  • Total Time: 45 minutes
  • Yield: 2 servings

Ingredients

Steak

  • 2 (8-10 ounce) New York strip steaks (at least 1-inch thick)

Seasoning

  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper

Finishing

  • 2 tablespoons resting butter (or plain salted butter)

Instructions

  1. Bring steaks to room temperature: Remove the steaks from the refrigerator and packaging. Place them on a plate and let them sit at room temperature for at least 30 minutes, or up to 2 hours, to ensure even cooking.
  2. Preheat oven and skillet: Preheat your oven to 375℉ (190℃). Meanwhile, heat a large heavy skillet over high heat until it is smoking hot. Turn on your vent hood to manage smoke.
  3. Season the steaks: Rub both sides of the steaks with 2 teaspoons of olive oil. In a small bowl, mix 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon white pepper. Rub this seasoning blend evenly on both sides of each steak.
  4. Sear steaks: Place the steaks in the hot skillet and sear for 2-3 minutes per side without moving them excessively to develop a golden-brown crust. Use tongs to turn the steak onto its side and sear the fat edge for an additional 2-3 minutes to render the fat fully.
  5. Finish cooking in the oven: Transfer the skillet with the seared steaks into the preheated oven. Cook until the internal temperature reaches about 125°F, removing the steaks 5 degrees before your target doneness (130℉ for medium) because the temperature will rise while resting.
  6. Rest and serve: Immediately top the hot steaks with 1 tablespoon of butter each. Let the steaks rest for 10 minutes to allow juices to redistribute and the steak to come to the final temperature, enhancing tenderness and flavor.

Notes

  • Resting the steak is crucial to keep it juicy and flavorful. Do not skip this step.
  • You can adjust the seasoning mix to your preference; adding garlic powder or smoked paprika can add extra flavor.
  • Use a cast-iron or heavy skillet for best searing results.
  • Check doneness with an instant-read thermometer for perfect results.
  • Letting the steak come to room temperature before cooking helps it cook more evenly.
