Ingredients
For the Cauliflower
- 1 large head of cauliflower, cut into florets (about 2 1/2 pounds)
- 3 tablespoons olive oil or avocado oil
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin
- 1/2 to 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
For Serving
- Fresh cilantro, to taste
- Red or green onion, sliced, to taste
- Fresh lime wedges, for squeezing
- Avocado slices or chunks, optional, for garnish
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a large, rimmed baking sheet with parchment paper to prevent sticking and ease cleanup.
- Prep Cauliflower: In a large bowl, add the cauliflower florets. Drizzle with olive or avocado oil, then sprinkle the chili powder, garlic powder, onion powder, cumin, kosher salt, and black pepper evenly over the florets. Toss thoroughly until every floret is coated with oil and spices.
- Arrange on Baking Sheet: Spread the seasoned cauliflower out evenly on the prepared baking sheet, making sure the florets are in a single layer without overcrowding. This helps achieve even roasting and caramelization.
- Roast Cauliflower: Place the baking sheet in the oven and roast for 20-26 minutes, flipping the florets halfway through the cooking time for uniform caramelization. Roast until the cauliflower is tender and has developed a delicious, crispy, caramelized exterior. For extra crispiness, roast a few minutes longer if desired.
- Serve and Garnish: Remove the cauliflower from the oven. Transfer to a serving dish and top with fresh cilantro, sliced red or green onion, and squeeze fresh lime juice over the top. Add avocado slices or chunks if using, and serve immediately while warm and flavorful.
Notes
- Adjust spice levels according to your personal taste preference; more chili powder can add extra heat.
- If using a smaller cauliflower, slightly reduce oil, salt, and spices proportionally.
- Ensure florets are evenly spaced on the baking sheet to promote even roasting and caramelization.
- For a nuttier flavor, try using avocado oil instead of olive oil.
- This recipe is naturally gluten-free and dairy-free, suitable for those dietary needs.
- Leftovers can be refrigerated and reheated in the oven to retain crispiness.
