This Pesto Grilled Cheese sandwich combines the rich flavors of pesto, sun-dried tomatoes, and melty mozzarella cheese between two slices of hearty bread. Perfectly pan-toasted with buttery, golden crusts, it makes a quick and delicious treat for any time of day.

  • Total Time: 15 minutes
  • Yield: 1 sandwich

Ingredients

Sandwich

  • 2 slices hearty bread
  • 1 Tbsp butter
  • 2 Tbsp pesto
  • 2 sun dried tomato pieces
  • 2 oz. mozzarella cheese

Instructions

  1. Prepare the bread: Spread 1/2 tablespoon of butter on one side of each slice of bread. Then, spread 1 tablespoon of pesto on the opposite sides. The buttered sides will be on the outside of the sandwich, while the pesto sides face inward.
  2. Add toppings: Chop the sun dried tomatoes into small pieces and sprinkle them evenly over the pesto-coated side of one bread slice. Next, shred or break the mozzarella cheese into small pieces and layer them on top of the tomatoes to help the cheese melt faster.
  3. Assemble the sandwich: Place the other slice of bread on top with the pesto side facing the inside, completing the sandwich.
  4. Cook the sandwich: Heat a small skillet over medium-low heat. Place the sandwich in the skillet and cook until the bottom side is golden brown, about 3 to 5 minutes. Carefully flip the sandwich over and cook the other side until it also turns golden brown and the cheese melts inside.
  5. Serve: Remove the sandwich from the skillet, slice if desired, and serve hot to enjoy the gooey, flavorful grilled cheese.

Notes

  • Use a sturdy, hearty bread to hold the fillings well and get a crisp crust.
  • Adjust cooking time based on your stove’s heat to avoid burning.
  • Feel free to substitute mozzarella with other melting cheeses like provolone or fontina for variation.
  • Adding fresh basil leaves inside can complement the pesto’s flavor.
  • For a vegetarian option, ensure the pesto does not contain animal-derived cheese or substitute with vegan pesto.
