This Philly Cheesesteak Casserole is a hearty and flavorful twist on the classic sandwich, combining sautéed bell peppers, onions, garlic, mushrooms, tender roast beef, and melted provolone and mozzarella cheeses baked to bubbly perfection. It’s an easy, comforting meal perfect for a family dinner or entertaining guests.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Vegetables

  • 1 large green bell pepper
  • 1 large yellow bell pepper
  • 1 large red bell pepper
  • 1 small onion, thinly sliced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, thinly sliced

Main Ingredients

  • 2 tablespoons salted butter
  • 1 1/2 pounds deli-style roast beef, thinly sliced
  • 6 slices provolone cheese (about 6 ounces)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare Peppers: Cut the tops off the green, yellow, and red bell peppers, remove ribs and seeds, then thinly slice the peppers. Set aside for cooking.
  2. Sauté Onions and Garlic: In a large deep-sided ovenproof skillet or Dutch oven, heat 2 tablespoons of salted butter over medium-low heat. Add the thinly sliced onion and minced garlic and cook, stirring occasionally, until the onion becomes translucent and the garlic is fragrant, about 7 minutes.
  3. Cook Mushrooms and Peppers: Add the thinly sliced cremini mushrooms and prepared bell peppers to the skillet. Continue cooking, stirring occasionally, until the mushrooms release their liquid and the peppers are crisp-tender, approximately 10 minutes.
  4. Preheat Oven: While the vegetables cook, preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  5. Add Roast Beef and Cheese: Stir in the thinly sliced deli-style roast beef with the cooked vegetables in the skillet. Taste the mixture and add salt and pepper if desired. Layer the 6 slices of provolone cheese evenly over the top, followed by sprinkling 1 cup of shredded mozzarella cheese for a rich cheesy topping.
  6. Bake and Broil: Place the skillet in the preheated oven and bake for 15 minutes. After baking, finish the dish under the broiler for 2 to 3 minutes until the cheese is browned, bubbly, and slightly crisped on top. Remove carefully and serve warm.

Notes

  • Use an ovenproof skillet or Dutch oven to seamlessly transition from stovetop to oven.
  • Thinly slicing the bell peppers and roast beef ensures even cooking and better flavor absorption.
  • Adjust seasoning with salt and pepper to taste since roast beef can sometimes be salty.
  • For a spicier kick, add sliced jalapeños or drizzle with hot sauce before serving.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
