Ingredients
Main Ingredients
- 20 ounces frozen shredded hash brown potatoes
- 2 tablespoons butter, melted
- 1.5 – 2 cups jalapeno pimento cheese (or entire yield of homemade jalapeno pimento cheese recipe)
- 8 ounces sour cream
- ½ cup chicken broth
- 3-4 green onions, chopped
- ½ teaspoon salt
- ½ teaspoon coarse ground black pepper
Topping
- ½ cup grated sharp cheddar cheese (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 350° Fahrenheit. Lightly spray a 9×13 inch casserole dish with non-stick cooking spray to prevent sticking and make cleanup easier.
- Mix Ingredients: In a large mixing bowl, combine the frozen shredded hash brown potatoes with the melted butter, tossing thoroughly to coat. Add the jalapeno pimento cheese, sour cream, chicken broth, chopped green onions, salt, and black pepper. Mix everything well until all ingredients are evenly incorporated.
- Assemble Casserole: Pour the prepared potato and cheese mixture into the sprayed casserole dish, spreading it out evenly. If desired, sprinkle the ½ cup of shredded sharp cheddar cheese evenly over the top for an extra cheesy crust.
- Bake: Place the casserole dish in the preheated oven and bake for 35 minutes. Bake until the edges start to turn golden brown and the casserole is bubbling throughout.
- Rest and Serve: Remove the casserole from the oven and allow it to sit for 5 minutes before serving. This resting time helps the casserole set for easier slicing and enhances the flavors.
Notes
- Using freshly made jalapeno pimento cheese enhances flavor but store-bought versions work well too.
- For a spicier kick, add diced jalapenos or a pinch of cayenne pepper to the mixture.
- The sour cream keeps the casserole creamy; do not substitute with low-fat versions for best results.
- Cheddar cheese topping is optional but recommended for a golden, crispy finish.
- Letting the casserole rest before serving helps it hold its shape.
