Ingredients
Pineapple Mixture
- 20 ounces crushed pineapple, drained
- 20 ounces pineapple tidbits or chunks, drained with 6 tablespoons juice reserved
- 1 cup granulated sugar
- 6 tablespoons all-purpose flour
- 2 cups shredded sharp cheddar cheese
Topping
- 8 tablespoons salted butter, melted
- 2 sleeves Ritz crackers, crumbled
- 6 tablespoons reserved pineapple juice
Instructions
- Preheat and Prepare Dish: Preheat the oven to 350°F (175°C). Butter or spray a medium-sized casserole dish (approximately 9×11 inches) with cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the flour and granulated sugar until well combined. Stir in the shredded sharp cheddar cheese to evenly incorporate the cheese into the dry mixture.
- Add Pineapple: Add the drained crushed pineapple and pineapple tidbits to the cheese mixture. Stir thoroughly until all ingredients are evenly combined to create the pineapple base.
- Prepare and Add Topping: In a separate bowl, combine the crumbled Ritz crackers, the 6 tablespoons of reserved pineapple juice, and the melted salted butter. Mix well so the crackers are evenly coated and then sprinkle this topping evenly over the pineapple mixture in the casserole dish.
- Bake: Place the casserole in the preheated oven and bake for 30 to 40 minutes. The casserole is done when the top is golden brown and the filling is hot and bubbly throughout. Serve warm for the best flavor and texture.
Notes
- Use sharp cheddar cheese for the best contrast of flavors with the sweet pineapple.
- Make sure to drain the pineapple well to avoid a watery casserole.
- Let the casserole rest for a few minutes after baking to set before serving.
- This dish pairs well with ham or roasted poultry for a classic holiday meal.
- For a dairy-free version, substitute cheddar with a suitable vegan cheese and use dairy-free butter.
