Ingredients
Sauce Ingredients
- 1 tablespoon oyster sauce
- 2 tablespoons fish sauce
- 1 teaspoon mirin
- 3 tablespoons soy sauce
- 1 teaspoon sugar
Main Ingredients
- 2 tablespoons canola oil
- 2 cloves garlic (grated)
- 1/4 teaspoon red pepper flakes (optional)
- 1 red bell pepper (diced)
- 1/2 cup peas (frozen)
- 1/2 cup sweet corn (drained)
- 3 cups cooked jasmine rice (day old*)
- 1 1/2 cups fresh pineapple chunks (cut into 1 inch pieces)
- 1 lime (zested and juiced)
- 1/3 cup green onions (diced)
- 1/3 cup unsalted peanuts (roasted and chopped)
- 1/4 cup cilantro (chopped)
Instructions
- Mix the sauce: In a small bowl, combine oyster sauce, fish sauce, mirin, soy sauce, and sugar. Stir well and set aside to let the flavors meld.
- Preheat the skillet: Place a large non-stick skillet over high heat and add the canola oil, allowing it to heat until shimmering.
- Sauté aromatics: Add grated garlic and red pepper flakes to the hot oil. Stir continuously and cook for 30 seconds to 1 minute until fragrant without burning.
- Add bell pepper and pineapple: Toss in the diced red bell pepper and pineapple chunks. Stir frequently and cook for approximately 1 minute to soften slightly and release flavors.
- Add peas and corn: Incorporate the frozen peas and drained sweet corn into the skillet. Cook for 30 seconds, stirring to combine and warm through.
- Add rice and sauce: Add the day-old cooked jasmine rice followed by all prepared sauce. Stir thoroughly to combine and cook for 2 to 3 minutes, allowing the rice to absorb the sauce and heat completely.
- Add lime zest and juice: Sprinkle the lime zest and pour in the lime juice. Stir for about 1 minute to distribute the fresh citrus flavor evenly.
- Add green onions and remove from heat: Mix in diced green onions to the fried rice. Once combined, remove the skillet from heat to preserve freshness.
- Serve topped with peanuts and cilantro: Transfer fried rice to serving dishes. Garnish with roasted chopped peanuts and chopped cilantro for added texture and freshness before serving.
Notes
- Using day-old jasmine rice prevents the fried rice from becoming mushy by reducing moisture content.
- Adjust red pepper flakes quantity or omit for desired spice level.
- Fresh pineapple chunks add natural sweetness; canned pineapple can be substituted but may alter moisture content.
- Roasting the peanuts enhances their nuttiness and provides a crunchy texture contrast.
- This dish is best enjoyed immediately for optimal texture and flavor.
