Ingredients
Pineapple Turkey Tacos
- 1 tablespoon avocado oil
- ½ medium yellow onion, chopped
- ½ tablespoon minced garlic
- 1 pound ground turkey, 97% lean
- 1 tablespoon homemade taco seasoning
- ⅔ cup diced pineapple
- ½ cup favorite jarred salsa
- favorite taco shells
For Serving
- sliced red cabbage
- diced red bell pepper
- shredded lettuce
- sliced avocado
- fresh cilantro
- lime juice
Instructions
- Heat the oil: Add 1 tablespoon of avocado oil to a large skillet and heat over medium heat. Add the chopped yellow onion and minced garlic, cooking for about 3-4 minutes until softened and fragrant.
- Cook the turkey and season: Add 1 pound of 97% lean ground turkey to the skillet along with 1 tablespoon of homemade taco seasoning. Cook until the turkey is almost browned, breaking it up as it cooks for even cooking.
- Add pineapple and salsa: Stir in ⅔ cup diced pineapple and ½ cup of your favorite jarred salsa, then reduce heat and simmer until the turkey is fully cooked and flavors meld, about 3-5 minutes.
- Assemble the tacos: Spoon the turkey mixture into your favorite taco shells. Top with sliced red cabbage, diced red bell pepper, shredded lettuce, sliced avocado, fresh cilantro, and a squeeze of fresh lime juice for added brightness and texture. Serve immediately.
Notes
- You can easily adjust the heat level of the tacos by choosing a mild or spicy salsa and taco seasoning.
- For a paleo version, use lettuce wraps or paleo-approved taco shells instead of traditional taco shells.
- Leftover turkey taco filling can be stored in an airtight container in the refrigerator for up to 3 days.
- Adding fresh pineapple as a topping enhances the sweet and tangy contrast to the savory turkey.
- This recipe can be doubled to serve a larger group and freezes well if stored properly.
