This Pistachio Bread is a soft, moist quick bread made with yellow cake mix, instant pistachio pudding mix, and a rich nutty glaze. Perfect for a sweet breakfast treat or dessert, it’s easy to prepare and baked to perfection with an optional cinnamon sugar layer for added flavor and a vibrant green tint when using food coloring.

  • Total Time: 55 minutes
  • Yield: 12 servings (1 loaf)

Ingredients

Pistachio Bread

  • 15 ounce box of yellow cake mix
  • 3.4 ounce box instant pistachio pudding mix
  • 3 large eggs
  • 1 cup water
  • ½ cup melted butter or vegetable oil
  • ¼ cup sour cream
  • 1 Tablespoon cinnamon sugar (optional)
  • Green food coloring (optional)

Glaze (optional)

  • 1 cup powdered sugar
  • 2-3 Tablespoons heavy cream or milk (more as needed)
  • 1 Tablespoon salted butter, melted
  • ½ teaspoon vanilla or almond extract (more to taste)
  • ½ cup chopped pistachios

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F. Grease a 9×5-inch loaf pan or two 8×4 pans for smaller loaves. Optionally, sprinkle cinnamon sugar on the bottom of the pan for a subtle sweet crust, then set aside.
  2. Mix the Batter: In a large bowl, combine the yellow cake mix, dry instant pistachio pudding mix, 3 large eggs, 1 cup water, ½ cup melted butter or vegetable oil, and ¼ cup sour cream. If you desire a brighter green color, add a few drops of green food coloring and mix thoroughly until smooth.
  3. Fill the Pan: Pour the prepared batter into the greased loaf pan, spreading evenly to fill the pan completely.
  4. Bake the Bread: Place the pan in the preheated oven and bake for 40-45 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean when the bread is fully baked. If the bread starts to brown too quickly on top, tent with foil to prevent over-browning.
  5. Cool the Bread: Allow the bread to cool in the pan on a wire rack for about 10 minutes. Then carefully remove the bread from the pan and let it cool completely on the rack to avoid sogginess.
  6. Prepare the Glaze: While the bread cools, whisk together 1 cup powdered sugar, 2-3 tablespoons heavy cream or milk, 1 tablespoon melted salted butter, and ½ teaspoon vanilla or almond extract in a small bowl. Adjust cream or milk quantity to achieve a drizzling consistency.
  7. Glaze and Garnish: Once the bread has cooled completely, drizzle the glaze evenly over the top. Immediately sprinkle chopped pistachios over the glaze to add crunch and extra nutty flavor.
  8. Serve: Slice the loaf into 12 servings and enjoy this moist, nutty pistachio bread as a delightful breakfast or dessert treat.

Notes

  • Adding cinnamon sugar at the bottom of the pan adds a subtle sweet crust to the bread.
  • Green food coloring is optional for a more vibrant pistachio green color but does not affect flavor.
  • Adjust glaze thickness by adding more powdered sugar to thicken or more cream/milk to thin.
  • If using vegetable oil instead of butter, the bread may be slightly less rich but still moist.
  • Make sure to cool the bread completely before glazing to prevent the glaze from melting off.
