Enjoy a delightful Pistachio Pudding Bread that’s moist, flavorful, and topped with a sweet icing drizzle. This easy-to-make loaf combines the nutty taste of pistachios with the creamy texture of pudding mix, creating a perfect treat for breakfast, snack, or dessert.

  • Total Time: 1 hour
  • Yield: 1 loaf (serves approximately 8 slices)

Ingredients

Bread Batter

  • 1 1/2 Cups All Purpose Flour
  • 2 Large Eggs
  • 1/2 Cup Unsalted Butter
  • 1/4 tsp Salt
  • 1 tsp Baking Powder
  • 3/4 Cup White Sugar
  • 2/3 Cup 2% Milk
  • 1 Package Jell-O Pistachio Pudding Mix
  • 1/4 Cup Chopped Pistachios

Icing

  • 1 Cup Icing Sugar
  • 2 Tbsp 2% Milk

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 1.5-quart loaf pan, such as a Pyrex glass dish, to prevent sticking.
  2. Mix Wet Ingredients and Sugar: In a large mixing bowl, combine the white sugar, eggs, and unsalted butter. Mix thoroughly until the mixture is well blended and slightly fluffy.
  3. Add Milk and Dry Mixes: Pour in the 2% milk followed by the pistachio pudding mix, baking powder, and salt. Stir well to incorporate all ingredients evenly.
  4. Incorporate Flour: Gradually add the all-purpose flour, folding it into the batter carefully to avoid lumps. Ensure the batter is smooth and well combined.
  5. Pour Batter and Bake: Pour the prepared batter into the greased loaf pan. Bake in the preheated oven for 40 to 50 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
  6. Cool and Prepare Icing: Remove the loaf from the oven and let it cool completely in the pan. While cooling, whisk together the icing sugar and 2 tablespoons of 2% milk until smooth to make the icing.
  7. Decorate and Serve: Drizzle the icing over the cooled bread and sprinkle with chopped pistachios for added texture and presentation. Slice and enjoy your pistachio pudding bread!

Notes

  • Use a toothpick to test the bread for doneness before removing it from the oven.
  • Allow the bread to cool fully before icing to prevent the icing from melting off.
  • You can substitute unsalted butter with salted butter; reduce the added salt accordingly.
  • Chilling the bread slightly before icing can help the icing set better.
  • The pudding mix adds both flavor and moisture, so ensure you don’t skip it.
