4.1 from 13 reviews

Piyaz is a traditional Turkish white bean salad that combines tender beans with fresh vegetables, herbs, and a zesty dressing made from olive oil, apple cider vinegar, lemon juice, and garlic. This light, nutritious salad is perfect as a refreshing side dish or a healthy snack, featuring bright flavors enhanced by sumac, olives, and optional hard-boiled eggs.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Dressing

  • ¼ cup olive oil
  • 4 tablespoons apple cider vinegar
  • 1 garlic clove (peeled and minced)
  • 2 tablespoons lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Salad

  • ½ small red onion (sliced thinly in half moon shape, approx. ½ cup)
  • 2 cans white beans (Cannellini or Navy Beans, drained and rinsed)
  • 2 medium sized tomatoes (sliced ½ inch in half moon shape)
  • ½ cup Italian parsley (roughly chopped)
  • 1 tablespoon sumac
  • 3 tablespoons black pitted olives
  • 2 hard boiled eggs (sliced)

Instructions

  1. Make the dressing: In a bowl, whisk together olive oil, apple cider vinegar, minced garlic, lemon juice, kosher salt, and black pepper until fully combined. Set aside to let flavors meld.
  2. Prepare the onion: Place the thinly sliced red onion in a bowl of water and let it soak for 5 minutes to mellow its sharpness, then drain thoroughly.
  3. Assemble the salad: In a large mixing bowl, combine the drained white beans, soaked and drained red onions, sliced tomatoes, and chopped parsley. Drizzle the prepared dressing over the ingredients, sprinkle with sumac, and gently toss to coat everything evenly while preserving the bean’s texture.
  4. Chill to enhance flavors: Cover the salad with plastic wrap and refrigerate for 30 minutes. This resting period is optional but highly recommended as it allows the flavors to blend fully, elevating the taste of the salad.
  5. Garnish and serve: Before serving, garnish the salad with black pitted olives and sliced hard boiled eggs for added richness and visual appeal. Serve chilled or at room temperature.

Notes

  • Soaking the red onion reduces its pungency and makes it milder and more palatable in the salad.
  • The salad is best served after resting in the fridge for at least 30 minutes to allow the flavors to meld.
  • You can substitute white beans with other similar beans like cannellini or navy beans.
  • Sumac adds a tangy zest; if unavailable, a squeeze of lemon juice can slightly substitute.
  • Hard boiled eggs are optional but add protein and texture contrast.
