Ingredients
Potstickers and Vegetables
- 10-12 frozen potstickers or gyoza (do not thaw)
- 1/4 cup water
- 5-6 sliced white button mushrooms
- 1 cup broccoli florets
- 20 green beans, sliced in thirds
- 1 large carrot, sliced thin on a bias
- 1/4 cup diced onion
- Sesame oil
- Extra virgin olive oil
- Sesame seeds for garnish
- Sliced green onion for garnish
Sauce
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup rice wine vinegar
- 1 tbsp sugar or honey
- 1 teaspoon grated fresh ginger
- 1 tbsp cornstarch
- 1 tbsp cold water
Instructions
- Prepare the Sauce: In a small bowl, mix together soy sauce, rice wine vinegar, sugar or honey, fresh grated ginger, cornstarch, and cold water until smooth. Set aside to let the flavors meld while you prepare the other ingredients.
- Prep the Vegetables: Slice the carrot thinly on a bias for better texture and appearance. Slice the mushrooms. Cut the green beans into thirds on a bias. Separate the broccoli into small florets. Dice the onion finely.
- Cook the Potstickers: Heat a combination of olive oil and sesame oil in a stovetop skillet over medium-high heat. Add the frozen potstickers in a single layer. Fry them until the bottoms turn golden brown and crispy.
- Steam the Potstickers: Add 2 tablespoons of water to the skillet and immediately cover with a lid. Allow potstickers to steam for 3-4 minutes so they cook through. Remove the lid and continue cooking uncovered until any remaining water evaporates and the bottoms remain crisp. Remove potstickers from the skillet and set aside.
- Sauté Mushrooms and Onions: Add 1 tablespoon of olive oil to the same skillet. Add sliced mushrooms and diced onions, cooking until they turn browned and aromatic. Remove from skillet and set aside.
- Sauté Broccoli: Add a teaspoon of sesame oil to the skillet, then add broccoli florets. Cook for 3-4 minutes until tender-crisp. Remove and set aside.
- Sauté Green Beans and Carrots: Add 1 tablespoon of olive oil to the skillet. Add green beans and carrot slices, cooking for about 3-4 minutes until they are cooked but still al dente.
- Combine Ingredients and Sauce: Return the cooked broccoli, mushrooms, and onions back to the skillet with the green beans and carrots. Add the cooked potstickers. Pour in the prepared sauce and stir everything together, cooking until the sauce thickens and coats the ingredients evenly.
- Serve: Transfer the stir fry to a serving dish. Garnish with sesame seeds and sliced green onions. Serve hot with rice for a complete meal.
Notes
- Do not thaw the potstickers before cooking to ensure they sear and steam properly.
- Adjust the sweetness in the sauce by using honey or sugar according to taste preference.
- You can substitute vegetables based on availability, such as bell peppers or snap peas.
- For a spicier version, add a dash of chili flakes or sriracha to the sauce.
- Serve immediately for best texture; potstickers may become soggy if left too long.
