Puerto Rican Carne Guisada is a hearty, flavorful beef stew simmered with traditional seasonings, sofrito, and vegetables. Tender beef cubes are slowly cooked with potatoes, carrots, and olives in a rich tomato-based sauce, making it a comforting and cherished dish perfect for serving alongside fluffy white rice.

  • Total Time: 2 hours 15 minutes
  • Yield: 10 servings

Ingredients

Meat and Vegetables

  • 2 ½-3 lbs beef stew meat, cubed
  • 1 small onion, diced
  • 1 lb potatoes (about 2), peeled and cubed
  • ¼ lb carrots (about 2), peeled and cubed
  • ½ cup Spanish green olives or alcaparrado

Seasonings and Sauces

  • 1 tablespoon vegetable oil
  • ½ cup sofrito
  • 8 oz tomato sauce
  • 1 tablespoon adobo seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon oregano
  • ¼ teaspoon black pepper
  • 1 packet Sazón (optional)
  • 1-2 cups water

Serving

  • White rice, for serving

Instructions

  1. Brown the Beef: Heat the vegetable oil in a large 6-quart pot over high heat. Add the cubed beef stew meat and brown it on all sides to develop flavor and seal in the juices.
  2. Sauté Aromatics and Seasonings: Add the sofrito and diced onion to the pot and sauté for 2 minutes. Stir in the tomato sauce, adobo seasoning, garlic powder, oregano, black pepper, and the optional Sazón packet to enhance the stew’s depth of flavor.
  3. Simmer the Meat: Pour in enough water, approximately 1 to 2 cups, just to cover the meat. Bring the mixture to a boil, then cover the pot, reduce the heat to a simmer, and cook for 1 to 2 hours until the beef becomes tender. Check after 1 hour to assess tenderness.
  4. Add Vegetables and Cook: Once the meat is tender, add the peeled and cubed potatoes, carrots, and Spanish green olives or alcaparrado. Add more water if necessary to cover the ingredients. Cover and continue cooking for about 30 minutes or until the vegetables are soft and cooked through.
  5. Adjust Seasoning: Taste the stew and adjust the seasoning by adding more adobo or salt according to your preference.
  6. Serve: Serve the Carne Guisada hot alongside fluffy white rice to complete this traditional Puerto Rican meal.

Notes

  • For extra flavor, marinate the beef with adobo and garlic powder for at least 30 minutes before cooking.
  • If you prefer a thicker stew, simmer uncovered for the last 15 minutes to reduce the liquid.
  • Sofrito is a traditional blend of peppers, onions, garlic, and herbs—available pre-made in many Latin markets.
  • Sazón seasoning is optional but adds a distinctive Puerto Rican flavor and color.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
