Ingredients
Pumpkin Cake
- 1 batch Pumpkin Cake, baked in a 9×13 pan
Cream Cheese Frosting
- 6 ounces cream cheese, at room temperature
- 6 tablespoons butter, at room temperature
- 3 cups confectioners’ sugar
For Dipping
- 12 oz bag or bar of white or milk chocolate
Instructions
- Prepare the Pumpkin Cake: Make the pumpkin cake from scratch using a favorite pumpkin cake recipe or a boxed mix and bake it in a 9×13 pan. Allow the cake to cool completely before proceeding.
- Make the Cream Cheese Frosting: While the cake is baking, beat together the cream cheese, butter, and confectioners’ sugar using a stand mixer or hand mixer until the mixture is light and fluffy.
- Crumbled Cake Preparation: Once the cake has cooled, cut it into 12 bars and crumble into a large bowl. Use a fork to break any larger pieces until the texture is fine and crumbly.
- Mix Cake and Frosting: Add the prepared cream cheese frosting to the crumbled cake. Use the back of a large metal spoon to combine thoroughly. The mixture should be moist enough to shape into 1½-inch balls that hold their shape.
- Form Cake Pops: Roll the mixture by hand into 1½-inch balls and place them on wax or parchment paper. Cover with plastic wrap and freeze for 10 to 15 minutes to firm up.
- Melt the Chocolate: Place the white or milk chocolate in a deep microwave-safe bowl. Melt in the microwave or in a metal bowl over simmering water, stirring occasionally until smooth.
- Dip Cake Pops: Using a toothpick or fork to hold a cake ball, dip it into the melted chocolate until fully coated. Place the dipped cake pops on waxed paper to set. Trim any excess chocolate coating once set.
- Set and Store: Allow the chocolate coating to fully harden. Store the cake pops in an airtight container either at room temperature or in the refrigerator for several days. They can be made ahead of time for convenience.
Notes
- Use your favorite pumpkin cake recipe or a boxed mix to simplify preparation.
- Ensure the cake is fully cooled before crumbling to avoid a mushy texture.
- Freezing the cake balls before dipping helps them hold their shape better during coating.
- Be sure to temper or carefully melt chocolate to avoid graininess or burning.
- Customize by using either white or milk chocolate based on preference.
- Store cake pops in an airtight container to maintain freshness.
