Delight in these soft and tender Pumpkin Kiss Cookies, a perfect blend of spiced cake mix and pumpkin puree topped with a melty Hershey’s Kiss. They offer a festive fall treat that’s quick to prepare and sure to please with their delightful texture and chocolate caramel center.

  • Total Time: 1 hour
  • Yield: 50 cookies

Ingredients

Dry Ingredients

  • 15.25 ounce box of Betty Crocker Spice Cake Mix

Wet Ingredients

  • 15 ounce can of pumpkin puree

Toppings

  • 2 Tablespoons Wilton White Sparkling Sugar
  • 11 ounce bag of Hershey’s Kisses Milk Chocolate filled with Caramel or regular milk chocolate

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F. Line two large cookie sheets with parchment paper or silicone baking mats to prevent sticking and set aside.
  2. Mix Ingredients: In a large mixing bowl, add the 15.25-ounce spice cake mix and the 15-ounce can of pumpkin puree. Stir together with a sturdy wooden spoon until just combined, forming a thick dough.
  3. Portion the Dough: Using a 1-tablespoon cookie scoop, drop mounds of dough onto the prepared cookie sheets, spacing each about 2 inches apart for even baking.
  4. Add Sparkling Sugar: Lightly sprinkle each dough mound with the white sparkling sugar to add a festive sparkle and slight sweetness on top.
  5. Bake the Cookies: Place the cookie sheets in the oven and bake at 350°F for 10 to 11 minutes, until the cookies feel set around the edges but still soft in the middle.
  6. Unwrap Hershey’s Kisses: While the cookies are baking, unwrap all the Hershey’s Kisses chocolate to prepare for topping the hot cookies right out of the oven.
  7. Press Kisses Into Cookies: Immediately after removing the cookies from the oven, quickly press one Hershey’s Kiss into the center of each cookie while they are still warm.
  8. Cool Completely: Let the cookies cool completely on the baking sheets for about 45 minutes before removing them. This cooling time ensures the chocolate centers set perfectly without collapsing.

Notes

  • Make sure the cookies have cooled completely before removing from the baking sheets to avoid breaking or collapsing the melty Hershey’s Kisses.
  • You can choose between caramel-filled or regular milk chocolate Hershey’s Kisses depending on your preference.
  • If you don’t have a cookie scoop, use a tablespoon measure or spoon to portion the dough uniformly.
  • Store finished cookies in an airtight container to maintain freshness for up to 3 days.
