Ingredients
Bread and Cheese
- 16 slices of bread (such as Seattle sourdough sandwich rounds)
- 8 slices cheddar cheese
Mayonnaise Spread
- 4 Tablespoons mayonnaise
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
Toppings
- ¼ of an orange bell pepper (sliced into slivers)
- 8 oz can whole black olives (drained)
Instructions
- Cut Bread Circles: Use a cookie cutter to cut 8 slices of bread into circles. Set them aside for later use.
- Mix Mayonnaise Spread: In a small bowl, combine mayonnaise, garlic powder, and Italian seasoning, mixing well to create the flavorful spread.
- Spread Mayonnaise: Evenly spread the mayonnaise mixture over one side of all 16 bread slices to add flavor and aid browning.
- Prepare Skillet: Spray a large skillet with nonstick cooking spray to prevent sticking during cooking.
- Brown Circle Bread: Place the 8 circle-cut bread pieces mayonnaise-side down in the skillet. Cook for 2 to 3 minutes until golden brown, then remove and set aside.
- Layer Sandwich Bottom: Place the remaining 8 slices of bread mayonnaise-side down in the skillet as the base layer for each sandwich.
- Add Cheese: Place a slice of cheddar cheese on top of each of these base bread slices.
- Top Sandwiches: Place the browned bread circles on top of the cheese slices, ensuring the browned side faces outward for a crispy exterior.
- Insert Pumpkin Stems: Slide a sliver of orange bell pepper between the cheese and the top bread slice to simulate a pumpkin stem.
- Cook Sandwiches: Cook the assembled sandwiches for 2 to 3 minutes until the bottom is browned and the cheese has melted completely.
- Repeat Process: Continue assembling and cooking sandwiches in batches until all are finished.
- Create Black Olive Spiders: Use the drained black olives to craft spider shapes and place them on top of the warm sandwiches so they slightly melt into the bread, enhancing the spooky presentation.
- Serve: Serve the grilled cheese sandwiches warm, ideally alongside roasted tomato pepper soup for a comforting and thematic meal.
Notes
- Use Seattle sourdough rounds or similar sturdy bread for best texture and shape retention.
- Ensure the skillet is properly heated and nonstick sprayed before cooking to achieve an even golden crust.
- Adjust garlic powder and Italian seasoning to taste if you prefer a stronger or milder seasoning.
- The orange bell pepper slivers not only add flavor but also a festive visual element resembling pumpkin stems.
- Black olive spiders can be made by slicing olives and arranging them creatively to add a fun Halloween touch.
- This recipe pairs wonderfully with a warm roasted tomato pepper soup to balance the richness of the grilled cheese.
- To make cleanup easier, use a nonstick skillet and wipe any cheese spills immediately after cooking.
