Ingredients
Boursin Cheese
- 2 packages (150g each) Garlic & Fine Herbs Boursin Cheese, softened (remove from fridge 10 minutes before making the dip)
Tomato Mixture
- 2 cups chopped tomatoes (Roma or Cherry tomatoes)
- 3 tbsp thinly sliced fresh basil
- 2 small garlic cloves, thinly sliced or minced
- 2 tbsp finely chopped red onion
- 2 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp kosher salt
- Pinch of chili flakes or red pepper flakes
Instructions
- Prepare Boursin Cheese: Remove both packages of Boursin Cheese from the refrigerator and set them aside to soften for about 10 minutes.
- Make Tomato Mixture: In a medium-sized bowl, combine the chopped tomatoes, thinly sliced fresh basil, minced garlic, finely chopped red onion, extra-virgin olive oil, balsamic vinegar, kosher salt, and a pinch of chili flakes. Stir everything together thoroughly using a spoon.
- Marinate Mixture: Allow the tomato mixture to sit for 10 minutes to let the flavors meld and deepen.
- Spread the Cheese: While the mixture is marinating, spread the softened Boursin Cheese evenly in a shallow bowl or on a plate.
- Assemble the Dip: Using a slotted spoon, carefully spoon the tomato mixture onto the spread Boursin Cheese, ensuring you leave excess liquid behind to prevent sogginess.
- Garnish and Serve: Garnish the dip with additional fresh basil leaves and serve immediately with toasted baguette slices or your preferred crackers.
Notes
- Use a slotted spoon to avoid transferring excess liquid from the tomato mixture onto the cheese.
- For best flavor, let the tomato mixture marinate for the full 10 minutes, but you can skip this step when in a hurry.
- Serve with toasted baguette (crostini) or your favorite crackers for the perfect crunch.
- Remove the cheese from the fridge ahead of time to let it soften and spread easily.
- Feel free to adjust the chili flakes according to your spice preference.
