Ingredients
Marinade and Chicken
- 2 tablespoons chicken taco seasoning
- 1/4 cup olive oil
- Juice from 1 orange (about 4 tablespoons)
- Juice from 1 lime (about 2 tablespoons)
- 1 tablespoon freshly chopped cilantro
- Kosher salt, to taste
- Fresh cracked pepper, to taste
- 1 lb. boneless, skinless chicken breast, diced into 1-2 inch pieces
To Serve
- Street taco corn tortillas
- Diced onion
- Freshly chopped cilantro
- Your favorite salsa
- Crumbled Cotija cheese
- Lime wedges
Instructions
- Make the Marinade: In a small bowl, combine the chicken taco seasoning, olive oil, orange juice, lime juice, freshly chopped cilantro, and add a couple large pinches of kosher salt and fresh cracked pepper. Stir to blend the flavors well.
- Marinate the Chicken: Place the diced chicken breast into the bowl with the marinade, nestling the pieces so they are fully coated. Cover the bowl and refrigerate for at least 1 hour and up to 6 hours to allow the chicken to absorb the flavors.
- Prepare the Grill: Heat a cast iron griddle or grill pan over medium-high heat until very hot. Once heated, reduce the heat to medium to avoid burning the marinade.
- Cook the Chicken: Add the marinated chicken pieces in batches to the griddle. Cook without stirring until a dark golden brown crust forms on the bottom, then turn and cook until all sides are evenly browned and the chicken is cooked through, about 10 minutes total depending on the size of pieces.
- Assemble Tacos: Dice the cooked chicken if desired, then serve inside warm street taco corn tortillas. Top with diced onion, freshly chopped cilantro, your favorite salsa, crumbled Cotija cheese, and lime wedges for squeezing over the tacos.
Notes
- Marinating for at least 1 hour allows the chicken to soak up the bright, tangy flavors but can be done up to 6 hours ahead for greater depth.
- Cooking the chicken in batches ensures a nice crust forms without overcrowding the pan and steaming the meat.
- If you don’t have a cast iron griddle, a grill pan or outdoor grill can also be used to cook the chicken.
- Warm the corn tortillas before assembling tacos by heating them briefly in a dry skillet or over an open flame.
- Adjust seasoning to taste, adding more salt or lime juice after cooking if desired.
