This Rainbow Roll Sushi recipe is a vibrant and flavorful Japanese dish featuring layers of fresh salmon, mango, avocado, and imitation crab rolled with sushi rice and nori seaweed. Perfectly balanced with creamy avocado and crisp cucumber, this colorful sushi roll offers a delightful taste experience that’s as beautiful as it is delicious.

  • Total Time: 15 minutes
  • Yield: 1 serving (1 sushi roll, 8 pieces)

Ingredients

Sushi Base

  • ¾ cup Sushi Rice (cooked)
  • ½ Nori Seaweed sheet

Filling

  • 3 pieces Imitation Crab (Surimi)
  • 3 slices Avocado
  • 1 piece Cucumber (sliced lengthwise)

Toppings

  • 2 slices Salmon Fillet (raw and fresh, rectangular)
  • 2 slices Mango (not too soft, rectangular)
  • 2 slices Avocado (softer, rectangular)

To Serve

  • Soy Sauce
  • Wasabi
  • Pickled Japanese Ginger slices

Instructions

  1. Cut nori. Cut the nori sheet into half to prepare the base for rolling the sushi.
  2. Place cooked rice over nori. Place almost all the cooked sushi rice over one side of the nori sheet, reserving 2 tablespoons. Spread the rice evenly and press down gently so it sticks to the nori.
  3. Turn nori and spread remaining rice. Flip the nori sheet over and spread the remaining rice across it, leaving about 1 inch (2 centimeters) of space at the top border and ½ inch (1 centimeter) at the bottom. Ensure the rice adheres well to the nori.
  4. Prep filling ingredients. Prepare sliced avocado and cucumber lengthwise to be used as fillings for the roll.
  5. Place imitation crab over sushi rice. Lay the 3 pieces of imitation crab in a line over the sushi rice, trimming the center piece if necessary for a proper fit.
  6. Arrange avocado and cucumber. Similarly, arrange the sliced avocado and cucumber evenly along the line of the crab pieces inside the roll.
  7. Roll in and press down sushi. Use a sushi rolling mat to roll the sushi tightly by holding with both hands and pressing down gradually to ensure the roll is compact and won’t fall apart when sliced.
  8. Prep topping ingredients. Slice the salmon, mango, and soft avocado into thin rectangles about 0.1 inches (3 millimeters) thick for topping the roll.
  9. Arrange salmon, mango, avocado slices on top. Neatly layer the salmon, mango, and avocado slices on top of the rolled sushi.
  10. Press down topping. Cover the sushi roll with cling wrap, then place the sushi mat on top and press down gently so the toppings adhere firmly to the rice.
  11. Cut sushi slices. Remove cling wrap and mat, then cut the sushi roll into 8 equal-sized pieces using a sharp knife.
  12. Serve up. Serve the rainbow sushi roll with soy sauce, wasabi, and pickled Japanese ginger slices. Enjoy your delicious sushi!

Notes

  • For best sushi rice, rinse rice thoroughly and cook according to sushi rice instructions; season with rice vinegar, sugar, and salt as preferred.
  • Use fresh nori seaweed sheets for optimal texture and flavor.
  • Imitation crab (surimi) is commonly used to replicate crab flavor economically and is ideal for sushi filling.
  • Ensure salmon is sushi-grade and fresh to prevent health risks when consuming raw fish.
  • Use a sharp knife dipped in water to make clean cuts of sushi rolls without crushing them.
